Best Pizza I've ever made!

I saw another thread about pizza recently, and I just had to share the BEST thin crust pizza recipe I've ever tried:

It comes out fantastic and only takes 15 minutes to make!   I've made this style pizza a few dozen times now, and I'm a believer!

You'll never want to buy pizza again!

I have all the things I need for toppings, a 12" skillet, and tortillas in the freezer. I guess I know what I'm making for lunch tomorrow!

My cast iron skillet is smaller, so I'm adding the right size tortillas to my shopping list now. Petite pizzas, here we come! Thanks for this.

Thanks for the post, I can't wait to try this! I got Kenji's book for Christmas and I absolutely love it. I have made it through the breakfast and soup chapters. I am now cooking the best breakfasts and soups I ever have. 800 or so pages to go.

I want Kenji to come out with a vegetarian book! He has so many excellent vegetarian recipes on Serious Eats.

Funny you should ask, we made it last night. The tortillas I used were slightly larger than the pan, so they developed a short, crispy rim, which was good, and handy for sliding the pizzas out of the super-hot pan. It was reasonably tasty and will be added to our pizza rotation, but it wasn't life-changing, primarily because they weren't all that filling and they lose their heat quickly. The smell of the cast iron pan pre-heating isn't all that aromatic either.

If you're cooking for more than yourself and you have two cast iron frying pans, I'd fire up both of them so you can crank them out faster.

My results were so-so, but that's my fault. I didn't use enough heat and I used too much oil. This meant my tortilla was a little soft and I didn't get the hard, cheesey crust. The recipe says to turn heat to low after preheating the skillet, but I don't think he means low low. I did the lowest setting. Next time I will do med-low and leave the pizza in the skillet a little longer before broiling.

He also didn't mention broil high or broil low. I did one on high and one on low and the high one turned out better.

I'm still getting the hang of this cooking thing, so I will get better results next time I try this thing I'm sure.

I tried it out with some major changes.
Used a round Chapati (Indian flatbread) instead of tortilla. Home made sauce.

The first one came out quite soggy since I did not heat enough in the pan.

The next one was crispy and was great.

I'll bet the flatbread was a lot more filling and stayed hot long enough to be devoured. Good idea C&I, I'll try that next. Thanks!

Hmm, sounds like a pretty simple recipe. We make our own pizza bases with just self-raising flour and natural yoghurt. Only challenge is to get the right amount of yoghurt to make the dough between crumbly and sticky.
