Short term rentals in Sydney

My wife and I have been slow-traveling around the world since June and a trip to your neck of the woods is long overdue. Neither of us has ever been to Australia. We plan on spending most of our time in Sydney between late February through mid-April, so perhaps 5-7 weeks total.

The most important factors are:
1) having a full apartment with a real kitchen and living room
2) cycling distance to surfing beaches
3) amenities reasonably close and ease of access to the city

So far I've narrowed it down to either the Randwick area or the Northern Beaches. I'd love to hear what else could fit the bill.

How would you go about finding lodging for that much time? So far I see two options:

1) Airbnb, Booking.com and similar sites. Not much of a discount for long term stays, which becomes very expensive very quickly for a reasonably-sized apartment. If we were to go that route, I think it requires booking early
2) Looking at the local housing Facebook groups. A lot more upfront work to find something, unclear how we would vet each other from abroad without being scammed, but pricing appears to be much more reasonable. Annoyingly, I think the timing for this type of lodging is the opposite, i.e. people appear to be listing their places only a few weeks out so it's too early to get a sense of what will be available

Am I missing something? I would appreciate any and all insights.

Why Sydney?

I’m not a Sydney fan, but Sydney has some of the worst traffic of anywhere in Australia (I thought it was the worst, but evidently that’s changed slightly), and it definitely has the worst traffic for bicycling. On the other hand, if you want to stay in a capital city, Perth has good cycling and their beaches are as good or better than Sydney’s - they both have fantastic beaches, and they have similar weather.
