wood finish for windows

Hi guys, I just finished putting in some new windows. They have VG fir on the interior and they come unfinished. Any recommendations on what to use? I usually use tung oil on furniture but figure I might want something a little more protective and was thinking a matte poly blend like General Finishes Armorseal? Anyone else get good results? I'm looking to just have the wood yellow a bit, not get stained something more drastic.

I worked on a painting crew many years ago. Our standard treatment for interior wood windows was stain and 3 coats of poly.

Arm-R-Seal is a wonderful product. I have used it on many furniture products for years.  It is an poly blend.  Any oil based product is going to yellow a bit.

I just went through this and found a couple coats of '1-step stain and poly in 1' worked the best on new pine casements. On one, I tried pre-stain, stain, and dedicated poly and didn't care for the results at all. Maybe on something like oak, but not pine.
