Look into the vanguard funds.  They will likely have low fees.  Choose the one that fits into your overall asset allocation (assuming your HSA is being used as a retirement vehicle).

You are not tied to the HSA custodian selected by your employer.  Once the money is "yours" (which is immediately), you can move it.  Particularly if you will not be spending it on current medical expenses, it may be worth it to look around.  We move ours from Wells Fargo (yuck!) to HSA Bank each January immediately after DW's employer puts it in (leaving $100 to avoid hassle of opening a "new" Wells account each year).

There is a wiki at bogleheads that deals with this, along with quite a few discussions at both that site and this one.  (E.g., search MMM forums for "HSA Bank" and you'll get a host of results).
