What to do with huge bag of frozen berries?
« on: December 03, 2015, 02:43:00 PM »
This isn't earth-shattering, but I have a huge bag of Costco organic mixed frozen berries in my freezer.  You don't need to tell me that I should "eat them."  :-)  I'm just looking for creative ideas to use them up -- other than smoothies and jam.

Add them to waffle batter.
Reduce for a lovely sauce over salmon/trout.
Make them into wine!

Since my wife and I make green soomthies EVERY DAY, Costco bags of berries no longer look huge!

I love them in my oatmeal.  I use "old fashioned" oats, pour them in a bowl, scoop of peanut butter, bit of honey, handful(s) of frozen berries, pour on boiling water.  Great breakfast!

Berry cobbler. Flavored ice cubes. Fruit sauces for poultry or red meat.

Summer pudding - absolutely the best, but there are other berry deserts - pies, crumbles, upside down cake...

Berry syrup - can be used in an immense number of ways, including as coulis.

Berry fizzy drink (made similarly to ginger beer - look up berry champagne)

And you can always use them in a main course.

Do you mean those 5 pound re-sealable bags?  I just let the thaw out a little and eat them, big bowl fulls at a time.

I use these in breakfast muffins. You could also put them on top of baked brie.

Mix with yogurt. Bonus points if you make your own yogurt.

Crisp. Put a bunch in an oven safe casserole ( like to do 50/50 with apples or peaches) and then mix together soft butter, sugar and oats until it's crumbly. Sprinkle on top and bake at 350 until the fruit is soft, about 45 minutes.

since you have all the standard ideas, I'll pitch the unorthodox.

sauces for meats - go savory

Applesauce with porkchops is a standard so is cranberry with turkey. Challenge your cooking with a berry sauce for your next protein dish.

The first answer was the right one:  Wine.  We're just about to start ours.  The house can is about 4 degrees too warm to make wine in the summer, so we freeze them for the winter months.

I defrost a cup or two the night before and make awesome berry filled pancakes or crepes the next morning.  As has been mentioned, they also work well on ice cream, oats, with yogurt, cottage cheese, in muffins, in fruit filled sweet loaf, etc.  Berries also rock when you add them to vanilla pudding and top with whipped cream.  Also short cake.

In the "not even a recipe" category, thaw some, mash them with some sugar, and pile them onto bread. This always reminds me of being about 7 years old.

Sorbet: make a simple syrup (1 part water, 1 part sugar) boil this till sugar dissolves, pour over about six cups berries. Put through strainer or food mill. Add two tablespoons of some kind of hard liquor (any kind of brandy or vodka), then freeze, stirring a few times, until it's mostly solid. The booze keeps it from becoming rock hard. You can add some lemon juice, if you want.

This is considered the Highest Use of blackberries in our home (jam for raspberries).

No jam? What's the fun of that?

You could cook them into a pancake syrup.

Fruit leather.

Someone suggested muffins, that's always good.

Become hero of the universe to your horse/burro/chickens/ducks.

Although ducks are a bit of a pita and might require you to fully thaw them AND convince them that they're something they've had before, like grapes.

They like grapes. Anything they don't recognize that comes into their pen results in screaming and running...picture a feathered 4 year old.

If you don't feel that generous, place---still frozen---berries into a blender with equal parts rum. Look sternly at the dust on the furniture and other housework that needs doing.

If you put in enough rum, the dust disappears....

The last time I tried something like this my husband came home from work at midnight to find me dusting in my nightgown and sobbing. And that's why I am not allowed Tylenol PM any more.

We make ice cream... Or frozen yogurt. Or on top of ice cream. Or just in a bowl with almond milk. Or just eat them. They don't last long :)

serpeantstooth,

;-0

I feel your pain.

I'm a lightweight with drugs, and they prescribed two valium for me to take prior to surgery, since normally they have to outrun me to insert an IV.

So my friend who drove me to the bank on the way to the hospital still thinks it's funny that I apparently did a short stand up routine and then sat down on the floor giggling...

Yeah. I'm there.

Thanks for all the ideas.  I'm making meyer lemon curd tomorrow.  I thought I might drizzle some of that on top.

Blame Erica (NW Edible) for the lemon curd.  I just bought her wonderful book.

Microwave them (past thawing, get them warm/hot), then top with whipped cream.
