Title: What do you do with leftover egg whites?

Seems that everything I make calls for either whole eggs or yolks. I save the whites, they accumulate in the fridge, and then get thrown out. What can I use them for? (I'm not likely to make meringues regularly - and even if I were a fan of lemon meringue pie, the number of yolks in the "lemon" part equals the number of whites in the "meringue" part.)

My recipes for low carb / keto yeasted buns call for 3 egg whites for 6 buns.  I often have the problem of having leftover yolks.. if I were your neighbor we could trade lmao.    (I made some homemade hollandaise sauce the other day with leftover yolks).

Souffles (sweet or savory)
Angel food cake
Coconut macaroons
Any scramble-y eggy thing can probably have an extra white or two tossed in (scrambled eggs, egg bites/muffins, frittata, etc.)
Pignoli cookies

There's a ton of baking recipes that use egg whites, if you're not big on baking they are admittedly a lot harder to use up.

Egg white omelet, egg sandwich, egg white french toast, egg white pancakes, cook it up and mix it into tuna salad, drop it into soup, egg white frittata, egg white quiche.

Pretty much anything where you would use eggs can be done with just egg whites. Add a bit of cheese if you want to replace the fat of the yolk.

The white of the egg has always been my favorite, so DH fries them up and I make them disappear quickly! He is the cook in the family.

I would mix them with an additional whole egg then scramble and eat it on toast or in a tortilla with cheese.

Toss them into smoothies = excellent added protein

ETA - there is a risk of salmonella, but my anecdotal evidence is that I have never heard of anyone in my circles getting ill, I did it for years in high school, and my former teacher was a Canadian Weightlifting champ and this is what he did (before you could buy powdered protein at the grocery stores)

I make guacamole by adding a hard boiled egg or cooked egg whites to my avocado. Delish!

Thanks for the suggestions.

Souffle - usually the base calls for yolks, so there's no net benefit there.

Pignoli cookies - wow, those look delicious! I'm going to try those.

Cook and toss into tuna salad etc - hm, that's an interesting idea. Gotta try that.

Scramble with some cheese and maybe a whole egg - that does sound like a good lunch. "Egg white omelet" never tempted me, but add a little cheese and the equation changes.

Add to guacamole - I won't be doing that as my wife is the big avocado fan in the house and she hates eggs. I'm not sure I'd survive the consequences of poisoning her beloved guac with egg whites!

Add to smoothies - I rarely make them. I agree that raw eggs are low risk, but I did actually get sick once from eating cake batter made with eggs (the baked cake was fine and no one who ate it got sick). Also I'm not sure how things change if the egg white has been sitting in the fridge for a while.

As the "glue" in meatloaf, meatballs or similar.  I use 2 egg whites for each whole egg in the recipe.

Maybe you don't know this, but many recipes call for just yolks. For example, I recently made a chocolate banana cream pie. To make the chocolate pudding base, you cook milk, sugar and egg yolks until it thickens. If you put the whole egg in, the whites will curdle and you will have a big mess.

Add grated coconut
Let cool for 30 minutes

Heat oven to 350. Put small portions to a baking sheet

Yeah I hear ya if trying to get that perfect result. For me I don't follow recipes to a T, and rarely use them in general. Although I cook from scratch twice a day and don't eat processed foods, rarely grains and sugar unless berries!

1.  Pour the egg whites into an ice tray and freeze them, then store in a baggie in the freezer.  That way they don't go bad.

2.  I am a huge fan of mixing egg whites with whole eggs for omelets, scrambled eggs, breakfast tacos, etc.  I don't like egg-white-only omelets either, but a mix of egg whites and whole eggs takes more like regular eggs.

In my experience, just about every leftover good can be reasonably added to at least one of: rice&beans, oatmeal, and salad.

Egg whites would probably be good in all three.

The large amount of added fat in Mexican-style migas makes egg white preferable to whole egg in the dish, I think. I usually do mine with a little fried onion in addition to the salsa.

Back in the 90's low fat craze, I would make crispy snacks by dipping the sliced veggie into egg whites that had been beaten to a stiff peak and then into cornflake crumbs and bake in the oven.  This was good with onion rings, zucchini matchsticks and sliced mushrooms.

Another vote for merangue cookies, plus a Dicey story:

I learned to make these as a kid and they became kind of a specialty, because they're easy, impressive and delicious. In those days, they were not typically sold in stores, only bakeries. One day I discovered tubs full of mini meringue star cookies at Trader Joe's. As I was checking out, I asked the cashier if she had tried them. She leaned toward me, lowered her voice, and said, "Don't open them in the car!" She was right, and .I have used that sage warning as a mantra ever since. I still make my own, including a white chocolate chip and peppermint version for the holidays. Yum!

Has anyone mentioned egg whites freeze well yet?

Indeed I'm a Yank. I did try to make a Pavlova and wasn't too impressed with the results... but they are an unusual dessert here and so I don't have anything to compare it with. We have a trip to NZ planned later this year, so Pavlova will definitely be on my list of foods to try!

I don't think anyone has mentioned this yet.   You can easily feed them to pets. 

We have our own flock of chickens and we are always swimming in eggs.  When we have extra whatever -- yolks, whites, or whole eggs -- they go into pet food.  Both dogs and cats adore eggs. 

I do that raw, but if you're not comfortable with that just microwave them or cook them on the stove.

Of course you should realise that pavlova in New Zealand is nowhere near as good as pavlova in Australia. ;-)

I must admit...I have googled this topic in the past. My egg nog recipe calls for 5 egg yolks per bottle, and I made a bunch of bottles this year as gifts. So now I have a bunch of egg whites in my freezer. I did realize they freeze well.

he only thing I have done with it is make merengues and add a little extra whites to regular eggs for an omelet. I don't like egg-white-only omelets.

I must admit...I have googled this topic in the past. My egg nog recipe calls for 5 egg yolks per bottle, and I made a bunch of bottles this year as gifts. So now I have a bunch of egg whites in my freezer. I did realize they freeze well.

he only thing I have done with it is make merengues and add a little extra whites to regular eggs for an omelet. I don't like egg-white-only omelets.

Count me among those who just add them to whatever whole egg centric dish I'm making next: scrambled eggs, egg casserole, quiche, omelets, etc.  I like to keep it simple these days, and I'm over making meringues, angel food cake, etc. to use up egg whites.  I even started making mayonnaise with whole egg instead of only egg yolks.

I will also add an egg white or two to bread dough if they happen to be sitting there unused and no one is planning to eat eggs.  I add one whole egg per loaf when I make whole wheat bread (for the lecithin in the yolk), and an extra egg white isn't going to change things up much, but will add protein.  Since egg whites are mostly water, you can put them in a measuring cup and then add enough water to equal what the recipe calls for.

Hmmm, I wonder if you could pulverize the eggshells, then add the powder to the egg whites when you cook them up? The chickens might happily gobble down those extra nutrients. Whirling up ggshells is dead easy, especially if they're dried out.

^As a huge merangue fan, that was very difficult to write, but it might work.^

Yes, you can add the shells back to their diet.
Supposed to cook the shells first, can roast in the oven.  We give our girls oyster shells and put the eggshells in the compost. 


BTW, for anyone concerned about Salmonella, it’s on the surface of the shell.  And you should always assume that every chicken has it, wash your hands after touching egg shells.

Correction on my part...I do let them free range so they get plenty of meat by eating worms and other critters in the garden.

Do you feed them any other kind of meat protein?

Chickens aren't natural vegetarians (they're omnivores), so I imagine if they don't have any meat or high-protein things in their diets, they may crave that more.
Hmmm, I wonder if you could pulverize the eggshells, then add the powder to the egg whites when you cook them up? The chickens might happily gobble down those extra nutrients. Whirling up ggshells is dead easy, especially if they're dried out.

Good ideas on how to feed them the egg shells. I just crunched them up in my hand so they were probably too large for the chickens to eat.

I must admit...I have googled this topic in the past. My egg nog recipe calls for 5 egg yolks per bottle, and I made a bunch of bottles this year as gifts. So now I have a bunch of egg whites in my freezer. I did realize they freeze well.

he only thing I have done with it is make merengues and add a little extra whites to regular eggs for an omelet. I don't like egg-white-only omelets.

You can absolutely feed eggs back to chickens -- they love them.  I whisk them up and microwave them, making a kind of "scrambled egg."  I don't believe the chickens have any idea what they are; they just know they're yummy.

I will try this. Can I feed them raw egg whites or does it have to be cooked? I would think it is easier for them to eat it cooked instead of a big glob of egg whites.

I have only fed them chicken feed and fruit/vegetable scraps, and the egg shells (which they didn't really eat).

I've never fed it to them raw, only cooked, so I don't know.  I guess I was leery of teaching them that raw eggs are yummy.  Every once in a while an egg breaks in the coop, and I don't want the chickens eating that . . .  :)

Worst case scenario a hen learns there is yummy stuff inside eggs, and starts breaking them open to eat them.  In 10 years I haven't yet had that happen, knock on wood, but I've heard of it.

Correction on my part...I do let them free range so they get plenty of meat by eating worms and other critters in the garden.

Do you feed them any other kind of meat protein?

That's pretty much it -- mine free range too and get worms and bugs.  Occasional cooked eggs.  I give mine oyster shell (you can get it from the farm store), and I compost their egg shells.

@snic if you got sick from batter it was likely the flour, not the eggs. Eggs are pasteurized but flour is raw and is a common carrier of e. coli etc. The reason they tell you not to eat raw dough is actually because of the flour and most packages have a warning of some sort. This is a super common misconception, though!
