T: Chicken quesedillas with corn and red pepper
W: Spaghetti bolognese and salad
R: Salmon with orzo pasta salad
F: Pulled pork sandwiches with orzo pasta salad

Okay, maybe this thread will help keep me motivated:

Dinners:

M - Grilled hamburgers and hot dogs, cut up fruit - done
Tu - Chicken pesto tortellini, salad
Wed -  Chicken marsala
Thursday - Leftovers
Friday - Sloppy joes, rice, veggies
Saturday - My son's birthday so we will probably eat out (I know, I know)
Sunday - Eat at my in laws

Work Lunches -
M - Take out sub - $7 (I know, I know)
Tu - Soup and salad
Wed - Strawberry chicken salad
Thursday - Prosciutto sandwich
Friday - Chicken chili

Breakfasts -
Same thing every weekday - Toast with peanut butter/canadian or turkey bacon/fruit

Snacks - almonds and yogurt

Sunday: Salmon & broccoli
Monday: Leftovers (salmon, osso buco from the weekend)
Tuesday: hotwings
Wednesday: pork loin with artichokes and mushrooms
Thursday: shredded pork shoulder tacos
Friday: T-bone steak and mashed cauliflower ($4.99 a pound on sale. and people thought I was weird for always cruising the meat aisle)
Saturday: Oxtail soup with pearl barley.

Sunday: hamburgers with pimento cheese; tomato and cucumber salad
Monday: Pasta salad (recipe below)
Tuesday: Green gazpacho and small steaks
Wednesday: Pasta salad again
Thursday: tacos with lemony kale salad
Friday: driving to an out-of-town wedding



I love Mollie Katzen's Marinated Pasta Salad from The Enchanted Broccoli Forest:

1 lb. orecchiette pasta (or other chunky pasta. Don't use the regular mini-shells, they don''t stand up too well)
6 T. olive oil
4 T. red wine vinegar
1.5 t. salt
4-6 garlic cloves, minced
1 to 2 cups finely minced red onion
.5 cup grated parmesan
2 bell peppers, any colors, minced
1 big cucumber, peeled, seeded, and minced
a big handful of minced fresh basil
a big handful of minced fresh parsley
Fresh black pepper
Yummy additions: cherry tomatoes, olives, toasted pine nuts, cubes of fresh mozzerella, garden-fresh peas

Cook the pasta until al dente. Drain and put in a large bowl.
Combine the oil, vinegar, salt, garlic, onion, and parmesan. Add to the pasta, mix well, and allow to cool.
Add the rest of the ingredients and mix well. Serve immediately or chill.
(Side note: these amounts make a "double batch" as compared to the original recipe in the book. This version makes a nice big batch, suitable for a week's worth of lunches or for taking to a picnic)

What is 'German bake'?  Google doesn't find it.

Sorry; that's my made-up name for a made-up dish. I described it on the forum somewhere the first time I made it - do you mean to tell me you're not hanging on my every word? ;-)

In a nutshell, here's the recipe:

 2-3 potatoes. scrubbed and chopped,
one can sauerkraut,
1/2 a head of cabbage, chopped,
a smoked sausage chopped up into really small pieces (turkey sausage in our case so as not to make my husband's gout worse),
 a few ounces of applesauce,
 two cups homemade bone broth.

Throw it all in the instantpot, cook on high pressure for ten minutes, stir, and eat with homemade bread.

Sunday, BBQ chicken
Monday, low carb burger wraps
Tuesday, left over BBQ chicken from Sunday on top of a big salad
Wednesday, broiled pork chops, quinoa, green beans
Thursday, spinach/ham/feta quiche
Friday, date night out for Thai food at local joint usually runs @ $35 with tip. Try to limit eating out to 2  times a month and never spend much more than that.
Saturday, I plan to go fishing so if they're biting ...fresh lingcod, brown rice , green peas
