Chili - chopped onions, minced beef (or veggie mince), tinned tomatoes plus maybe tomato paste, bit of garlic, tin of kidney beans, etc etc. You can brown the onions and whatnot before but it isn't required.
Duck stew - chopped onions, duck leg, potatoes, carrots, seasoning cube, chopped tomatoes (not as much as in the chili), water, bay leaf and whatever else you like.
I guess with the chili you'd want to do rice separately. If the duck stew ends up too watery I often put some rice in to soak up some liquid.
