Recommendations for a non-smart fitness watch?

I specifically don't want a watch that will have call/text alerts.  To each their own, but I don't need my wrist to buzz when someone sends me a text.
 Essentially I'm just looking for a men's fitness watch (step counter, distance tracker, heart rate monitor, etc) in the $100-150 range.  Any recommendations?  I'm sorry if this isn't the right forum for this.

I too was in this situation and got a smartwatch three weeks ago.  I just really wanted the health and sleep monitoring.  I wound up with a Galaxy Watch 4, as the price is coming down due to the 5 now being on the market.  I can say my cardio workouts have been more intense, and I am figuring out when I don't sleep so that I can figure out why.  The G4 watch is about the same price as the fitness watches I was looking at.

As far as functions that you don't want, you can turn them off.  However, I find that I do like being able to see who is calling me without rushing to wherever I laid my phone down.

Try Polar.  I've have good experience with mine (my heart rate monitor is 15 years old), although they might exceed your price range.

Withings has a couple of watches that just have activity/sleep trackers with analog watch display. On top of just not having call/text alerts (which I don't need), another huge benefit to me of not having a big-ass display is that it has like a 6 month battery life and just uses a normal watch battery. I have the Activité pop, although I think it's been discontinued at this point, but they may still be available somewhere! I think the Steel HR is the closest model to the Activité that they currently sell.

Something like the Garmin Vivosmart line would likely work. You could spend ~$50 on eBay for a 3 or 4. As another said, it might support (non-fitness) notifications, but you can disable all of them via the Garmin Connect app under device settings. It's very fitness focused as a device, though. The battery life is 7+ days. The screen is minimal.

(I spent $90 on eBay for a Garmin Venu; I do allow a few specific notifications to come through, but mostly use it as a 24/7 fitness tracker. I get 6-8 days of battery depending on how active I am; i.e. bike rides with GPS drain the battery faster.)

I'll second Polar, they have a variety of watches that support a variety of needs and functions none of which needed other tech to talk to (ie non-smart).  They aren't "cheap" but the quality was always good and they did their functions as intended for many years.

I have a Garmin vivosmart 4 (less than a year old).  PM me an offer if you are interested. I think it was $70-$80 new.

did you consider Xiaomi Mi band? For less than $50, you'll get all the functions you need and you can just disable the notifications in the menu. I used and abused one for almost 3 years and it died only after heavy grinding by sand and concrete and salt water bathing.

I have the Steel HR and would give it mixed reviews. I'm not going to replace mine when this one dies.
PROS: The watch display is *great*, I love have the activity tracker as an analog dial, the step counts are more accurate than my previous fitbit which died after too many rounds in the washing machine. Oh and it stops me looking as my phone as much because I can check the time elsewhere. The user forum is good - which they need to be since the official support is so bad.

CONS: It is very very bad at calculating distance unless you also have your phone with you*, which rather makes the whole thing redundant other than the HR monitoring since most phones have activity trackers built in. The customer service is also *shocking* and they have made no improvements on the distance calculations despite this being a known issue for many years. Oh and the watch face scratches and can shatter because it's mineral glass not sapphire. The user forum has some good instructions on how to repair this yourself.

*I mean, when I run the watch thinks a 48-year old 158cm tall woman is managing >110cm strides and hitting a pace that is twice my actual speed, which is flattering but also clearly wrong. I raised it with them and all they said was I entered my height/weight wrong and to take my phone with me.

I bought Fitbit inspire 3 last week. So far like it so much that bought another one for my wife.

I can't recommend Fitbit for 2 reasons:

1) Google owns them, and have no clear vision for what they'll do with their brands
2) Fitbit hides a lot of the stats you collect behind a $10/month paywall
