Hi!  Recently became a vegan, so I am looking for suggestions on how people eat (vegan) and what are their favorite recipes.

Please note - this is not about politics or nutrition.  If you want to start a thread about the horrors of veganism, please start a new thread.

I was vegan for a while, then went back to being a vegetarian. I found vegetarianism worked best for our family as I did not want to raise kids vegan and felt it would be too confusing for young kids navigating the morality and ethics of multiple diets in the family.

As an ex-vegan, my first recommendation would be to watch out with the grains (pasta, rice, breads, etc). It is really, REALLY easy to overdo it on grains in a vegan diet and many vegan recipes online are really carb heavy.

Staple meals when I was a vegan were things like lentil stews and soups, curries and dal, stirfries with tofu, and vegan pasta dishes such as pasta with marinara sauce with roasted eggplant. My personal recommendation is to steer free from fakes or trying to "veganize" meals that are just inherently not vegan - in particular, I felt like the vegan cheeses and yogurts were just a disappointment and made me want the real thing. I once read about a "great" vegan cheese that even non-vegans were raving about. I finally found it and dropped $13 bucks on a tiny circle and nearly cried when I tasted it because when you compared it to real brie, it just didn't even taste like cheese. I opted to go for naturally vegan meals (or those that could be made vegan by just removing a couple ingredients) instead, hence alot of ethnic cuisine.

I also would mention that as someone who lived it, being vegan can be very extreme, and the vegan communities can be almost militant in their thinking and shaming of non-vegans. Don't buy into the brainwashing that makes you think you can NEVER eat dairy, or eggs, or whatnot or else you will be a horrible person. If you eat vegan 95% of the time, but just cannot find a decent substitute for your favorite ice cream, then do yourself a favor and eat the dang ice cream. Many vegans quit because they can't keep the highly rigid lifestyle going for years on end, but maybe if people were a bit more forgiving with themselves (and others), they could eat mostly vegan for much longer.

Not vegan, but I end up making many vegan recipes. =) I am very heavy on the veggies front.

Curry: I use mae ploy sauces. You'll need to check since some have shrimp paste, but the yellow curry is vegan.. some other may be as well. I modify this recipe to make my curry: http://recipe-and-wine-reviews.worksavvyfreedom.com/jenns-beef-panang-with-green-beans/ Basically, I just use it for the cooking times =)

Med-high heat
Coconut oil, add curry paste, mix.
Add 1/2 can of coconut milk, and allow to simmer 2 min
Add veggie mix- I love costco's frozen stir fry mix, and it can go in frozen. Throw in protien at this point- I imagine tofu would go well, but I haven't tried it. I use chickpeas as a veg option
Cook 5 min
Add other 1/2 of coconut milk, and sugar. Not sure on a vegan sub for fish sauce, but I imagine any umuami sauce like coconut aminos would work. Simmer 2 more min.
Take off heat, stir in green onions and cilantro

Hummus: I love this recipe for homemade hummus- http://nourishedkitchen.com/sprouted-hummus-recipe/ You can leave out the tahini in terms of flavor if you add peppers, but tahini makes hummus more nutritionally complete, so even though it's spendy, it may be a good idea to leave in. I love hummus with chopped veggies, with popcorn, and a spread for wraps or sandwiches.

Veggie sides:

Roasted broccoli: Preheat oven to 400F. 1lb broccoli. I cut the bigger florets in half, so there is more contact with the roasting pan = more carmalizing yumminess. Drizzle with olive oil. Add 1-2 cloves fresh pressed garlic. Cook for 20min. Top with ~1tsp lemon juice. I usually top with feta, so you would need to play around with various cheese subs if you want a similar flavor. I haven't tried it with nutritional yeast but I should!
Kombu salad: http://paleomagazine.com/simple-paleo-seaweed-kombu-salad/#more-3781 Sea veggies. So addictive. I also use nori sheets to wrap any conceivable food. Delicious.
Baked kale chips: http://nomnompaleo.com/post/2648091289/baked-kale-chips Key is to be sure they are dry dry dry going in, and wait to salt/season until they come out. 350F for 10-12min, stirring half way.

Snacks:

Soften a few carrots and half an onion in a sauce pan. When done, throw in a cup of quinoa and two cups of veggie broth. Add seasoning like pepper or cumin or cayenne if you feel fancy. Simmer covered. Peak occasionally and add a can of drained chickpeas when less than half the liquid remains. Meanwhile cook some collard greens in a pan with a touch of oil and sugar. When the quinoa has absorbed all the liquid, serve in a bowl with the greens on top.

There is almost no way to screw up this recipe, it's very satisfying, and there are infinite variations with whatever you have on hand.

I'm an omnivore but I definitely want to add more vegan recipes to our rotation for health and budget reasons. Meats and cheeses have the effect of increasing a cost per meal by roughly 50% over similarly satisfying vegan meals.

Oh! And look up Budha Bowls. Most are vegan, and there are SO many incredible combos. Some of the sauces are positively inspired. There are pinterest boards you can follow. If you're not already on pinterest, I highly recommend it- best way to find and organize online recipes! I only own 2 *actual* cookbooks anymore.

I second the PPK (and her book, Veganomicon). Her recipes are usually more involved than I can muster on a work night, but reliably delicious. The cookie recipes are especially good.

I batch cook and freeze lunches with the basic formula of: choose a whole grain, top with a green, add a bean, then top with more veg and some kind of sauce. So the most recent example: about 2/3 cup of quinoa, then cover with some steamed kale, maybe 1/3 cup of chick peas and the same amount of diced firm tofu, and then a few peppers, carrots, onions that were sitting useless in the fridge. I topped with a tahini sauce (I don't measure: about 1/2 cup tahini, half a lemon's juice, a couple cloves of garlic, some parsley, salt, and a pinch of cayenne, whisked with hot water a bit at a time until it's pourable). I'll make 6-8 of these at a time in random plastic bowls, then pop it out and microwave in a real dish for lunch because I'm a bit paranoid about microwaving plastic. The last time was brown rice, sweet potato, black beans, corn, bell peppers, and jarred salsa. The process usually takes an hour including boiling and cleanup time but I find it worth it.

Do you have a Vitamix or comparable?

My DD was vegan and gluten free for a while so I ended up cooking vegan for a few months for both of us.  Our favorites were Indian staples: dal, aloo gobi and chana masala, all served with rice. I'm sure there are other Indian vegan options as well as many Indians are vegan.  I also had a recipe for a vegetable stew made with swiss chard and a variety of other veggies and coconut milk.  Also loved zucchini with peppers and tomatoes, served with a side of chickpeas and rice.  We also liked Georgian eggplant rolls with walnut filling (badridzhani nigvsit) - http://plenteousveg.com/georgian-eggplant-walnuts-badridzhani-nigvsit/.  Or Mexican black bean enchiladas... 

Plenty of international cuisines have great vegan options and I didn't really miss meat at all since we were getting plenty of flavor from the spices, cocunut milk, etc...

One of my favorite recipes lately is this pumpkin curry.  I have also made the tofu on its own and eaten it with a veggie side.  So delicious!

I am sort of part-time vegan, i.e when I cook dinner it usually ends up being vegan just because of my store cupboard contents.

My new favourite thing is using cashew butter as a thickener for stir-fry sauces. It's the best thing I've come across. I even use it when making BBQ sauce to put on meat, so it's not a vegan 'substitute' that isn't as good as the real thing.

My BBQ sauce recipe:
2 teaspoons cashew butter
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon maple syrup
1 teaspoon chipotle chilli (I get it in a jar in the supermarket)
A smidge of sea salt and black pepper

Vegans are often gamey and low in fat deposits, so you need to cook them like any lean meat.  Depending on the cut I prefer using a marinade (beer and worscheschire sauce) and then lightly breading and deep frying.  Slow cooking in a crockpot in olive oil with some garlic, oregano, and onion for about eight hours and then adding to pitas with some tzatziki sauce also works nicely.

Great ideas here. Here are some of my favs:

Lentil Roast  (super easy, yummy - good with a mushroom gravy)

2 cups cooked lentils
1 cup chopped pecans (other nuts, e.g., walnuts, work too)
2 cups unsweetened soya milk (other milks would work too)
1 1/2 cups breadcrumbs
1 small onion, diced
1 tsp salt
1/2 tsp sage
1/2 tsp garlic powder

Mix all together and bake at 350 for 60 mins (longer if deeper loaf pan)

Lentil Salad
 
2 Cans of Lentils
Sundried Tomatoes (julienne cut)
Green Onion
Garlic
Fresh cilantro
Fresh Lemon Juice
Parsley
Salt, Pepper
 
Drain the Lentils and wash them.  Basically this recipe is not specific (I copied the ingredients from an organic salad bar).  Cut up a large amount of fresh parsley and add to lentils.  Next, chop up about 3 green onions, finely and add. Add garlic to taste.   Chop up about a third of a jar of sundried tomatoes…Throw about 3 tablespoons of the sundried tomato oil into the mix, rather than just using plain olive oil - more flavorful.  Add salt, pepper, fresh lemon juice and cilantro to taste.

Hot and Sour Soup 
[Double this recipe for good amount; I add thick noodles from the Asian food shop]
· 4 cups water or stock
· 1/2 pkg extra firm tofu, cubed (original recipe calls for chicken)
· 1 clove garlic, chopped
· 3 chilis [or chili paste as desired]
· 1/2 red pepper, chopped 
· 2 Tbsp soy sauce
· 1 inch fresh ginger, grated
· 1 onion, chopped
· 4 mushrooms, sliced
· 2 Tbsp cornstarch
· 6 Tbsp vinegar
· 2 green onions, chopped

Bring the water or stock to the boil and add the
 garlic, chilis, red pepper and tofu. Bring to
the boil again and add the soy sauce, ginger, onion
and mushrooms. Let everything simmer for 5 minutes.
Mix the cornstarch with the vinegar and pour into the
soup. Bring the soup to the boil again and serve
sprinkled with green onions.If you want to thicken add
more diluted cornstarch.

Borracho Beans

(I do this recipe with dried pinto beans, soak overnight then cook recipe in slow cooker)
Ingredients:
1 - 16 oz. jar salsa, mild, medium or hot
1 - 16 oz. jar of water
4 - 15.5 oz. cans pinto beans
1 - small onion chopped (use red onion for added color)
1 - small bundle cilantro chopped (remove half of the stems)
1 - Tsp. garlic powder (to taste)

Directions:
Put everything into a pot (except cilantro) and bring to a boil for approx. 10 min.  Add the cilantro last. These beans are outstanding and easy to make.  Your guests will think you've been cooking all day!!!



Vegetable-Tofu Lo Mein
 
Makes two servings  (I double or triple recipe; I also pan fry the tofu at the start then add it to mixture later)
 
1/2 c bean sprouts
1/2 c julienne-cut carrot
1/2 c scallions (green onions) - reserve 1 tablespoon for garnish
 
1 packet instant vegetable broth dissolved in 1/2 cup warm water
2 tbsps creamy peanut butter
1 tbsp soy sauce
1/2 tsp cornstarch
dash of pepper
 
1/4 lb. firm tofu, cubed
1 1/2 c cooked spagetti (hot)
 
1. Spray nonstick skillet with cooking spray [olive oil] and heat; add bean spouts and carrot and cook over medium-high heat, stirring frequently, until sprouts soften, about 2 minutes. Add scallion (except garnish) and stir to combine; cook until carrot is tender-crisp, about 1 minute.
 
2. Using a wire whisk, in small mixing bowl, beat together dissolved broth mix, peanut butter, soy sauce, cornstarch and pepper; stir into vegetable mixture. Add tofu and stir to combine.
 
3. Reduce heat to medium and cook until mixture thickens, about 5 minutes. Add spaghetti and toss to coat.
 
4. To serve, transfer vegetable-spagetti mixture to serving bow and sprinkle with reserved scallion.

Wow!  Thank you everyone!  I really appreciate everyone's help.  Even you, Guitar.  I have lots of great ideas.

My current way of eating:
BF is 1/4 c oatmeal, 3T chia seeds, a fruit (blackberries today) plus soy milk and 1/2 scoop pea protein powder.  Plus salt, vanilla, cinnamon.  Microwave it.

Lunch is a bean and veggie soup.  Today I had black bean chili with lots of veggies.

Dinner is variable, usually high in veggies.  Today was spiralized squash with marinara sauce and vegan meatballs.

I have not started to work on making it economical - chia seeds and protein powder and fake meatballs are not cheap.  But I eat out a lot, and this has really put a damper on that, so I hope to spend less there.

Kim’s Award-Winning Vegetarian Chili

2 tbsp. oil
3-4 onions, chopped
6 cloves garlic, crushed
2 Tbsp. chili powder
2 tsp. oregano
2 tsp. ground cumin
1/2 tsp. ground cinnamon
pinch of cayenne
1 1/2 tsp. sea salt
28 oz. can tomatoes
5 cans/7 cups of beans- kidney, black beans, cannelini, etc. (lightly drained)

Saute onions and garlic in oil.  Add seasonings, then tomatoes and beans. Simmer for at least 20 minutes, stirring occasionally.

The horror of it is that half of your cooking knowledge goes out the window when you switch.  You should hear my wife complain about the ~2-3 months after I did (I'm the 80% cook). :-)  We got into a groove after a while.

Veganomicon is classic and awesome for a reason.  It turns out that of the two authors, Terry Hope Romero has the mad skillz, and her other cookbooks are *also* awesome.  We love love love both Viva Vegan and Vegan Eats World.

World Vegetarian ranks highly, but you have to flex a little on tweaking the recipes to become more vegan.  But it's got some good starts, and in general, Madhur Jaffrey's books are some of the best when it comes to Indian cuisine.

If you're a "try a bit of this" kind of cook, I've found that both Indian and Chinese are stellar starting points for tweaking.  They've both got very broad spice-based flavor profiles and tend to incorporate a lot of both veggies and {beans, tofu, etc.}.  The spice-centric flavor makes it easier to adapt from the loss of flavor from meat, which is a little more tricky when you try to adapt steak au poivre.  <grins>  There are some great african sources as well - vegan eats world has some ethiopian recipes that are downright awesome.

From a Mustachian perspective, beans & tofu are the win.  Making your own seitan is also easy and if you find good discounts on gluten flour (I found some on jet.com a while ago for a great price) it's pretty cheap.  Some of the Veganomicon recipes get a little too intricate when they probably don't need to, but they're fun to cook when you want to impress.

I do something similar with both quinoa and couscous. Make a large batch of both quinoa and couscous (either with water or with veggie broth). Split this into different portions and freeze. Defrost when needed and heat in microwave with some additional water. Stir fry some veggies -- onions, bell peppers, others. On a plate put a bed of spinach or other leafy green. Put quinoa or couscous. Top with veggie stir fry. Add nuts or other topping. Drizzle with olive oil.

I couldn't agree more.  Tried vegan for a while, wasn't for me, went back to vegetarian.

I'm gluten free and am fairly allergic to dairy and eggs so often vegan food works better for me than "regular."  i recently found this website and this is one of my favorite new recipes:

I got her cookbook from the library too and have tried a couple things in there so far.  Really yummy with whole ingredients.  not a big reliance on faux cheese, etc.

I use Minimalistbaker fairly often as I'm pretty lazy when it comes to cooking. http://minimalistbaker.com/recipes/vegan/

Basically "ethnic" recipes like Indian, Chinese, Mexican etc... often are vegan or can be easily veganised. I don't particularly like seitan or tempeh but I know lots of vegans who rave about using them in their cooking. I usually use tofu, beans and lentils as my protein sources. To be honest I don't track my diet that much.:D

I love sweet potatoes roasted in gochujang sauce with sesame oil, served over brown rice with black beans and greens. Soooooooo good.

2 large sweet potatoes, peeled, cut lengthwise and sliced into half-rounds about 1/2 inch thick.

Mix 2 T gochujang pepper paste with 2 T veggie oil,  2 tsp soy sauce,  2 tsp sesame oil and 2 T sesame seeds.

Pour over sweet potatoes and toss to coat thoroughly.

Spread out on a sheet pan and roast at 400 degrees until tender; turn once during roasting to brown easily.

I also lone Heidi Swanson's recipes and her cookbook Super Natural Everyday. Her indian-inspired avocado mash is sublime.

Another vote for Thug Kitchen. I have their cookbook. I'm not vegan (I still eat meat, yum!) but I still like the food.

Tofu scramble is a very easy dish and hard to get wrong. Stir fry onions, spring onions, bell peppers, mushrooms etc.. and then put in the broken up firm tofu. You can add garlic, salt, soya sauce, tamari, turmeric, black or white pepper or whatever taste you like.

I've heard from many vegans that black salt gives tofu scramble an eggy taste if you miss scrambled eggs.

Not exactly responsive but we rely on Quick Fix Vegan (and More Quick Fix Vegan) as our primary vegan cookbooks.  The dishes are more reliably hits with the family.  We found Veganomicon too cumbersome, and too exhaustive --- not enough curating of the recipes so there were a lot of fails.  Also, Thug Kitchen has a lot of nice stuff in it, but tends to involve a lot more work than QFV, which usually lives up to its name (relatively quick prep time).  I've always felt that you build up a level of trust with a cookbook and you're less likely to have unpalatable meals when you find the book(s) that matches your taste sensibilities.

VEGAN!  BLACK!  METAL!  CHEEEEFFFFF!!!!!  His food's kind of on the junky side, though.  He must have some endorsement deal with Earth Balance margarine since he seems to put a ton of it in everything.  Still, the videos can be hilarious, like when he cuts a potato and half of it falls on the floor and he growls "Satan takes his toll ..."

Thai-Style Vegetable Curry
Ingredients:

1 large bunch broccoli
2 tsp. garlic, minced
2 cups coconut milk
2 Tbs. tamari soy sauce
1 1/2 tsp. dried lemongrass, finely ground
1 tsp. dried basil leaves
1/2 tsp. ground coriander seeds
1/8 tsp. cinnamon
1/4 tsp. ground cardamom
pinch of crushed red pepper flakes
1 lb. sweet potatoes, peeled & chopped
1/2 lb. fresh mushrooms, halved or quartered
1 1/2 cups cooked chickpeas

Directions:
1.   Cut florets from the broccoli stalks and cut each floret so that the top measures about 1 inch across; peel off the outer skin of the stalks and cut into 1/2-inch dice; set aside.
2.   Heat 1 Tbs. of water in a pressure cooker (can be done in regular pot, but will take twice as long); cook the garlic over medium-high heat, stirring constantly, for about a minute.
3.   Add the coconut milk, soy sauce, lemongrass, dried basil, spices, red pepper flakes, reserved broccoli stalks, sweet potatoes, and mushrooms.
4.   Lock the lid in place; over high heat, bring to high pressure; lower the heat just enough to maintain high pressure and cook for 2 minutes.
5.   Remove the lid, and stir in the broccoli florets and chickpeas; replace the lid and cook over medium heat until broccoli is tender-crisp, 3 to 4 minutes.

I LOVE this recipe. I've made several variations of it (sometimes black beans instead of garbanzo, sometimes I'll leave one or two of the spices out if I don't have on hand). I often serve it over bulger wheat.

I second the Forks Over Knives recommendation. Realize that you don't need to make fancy food all the time. Most of the time we eat some kind of soup (lentil is a favorite), some kind of grain or bread, and a vegetable.

Posting to follow - I'm not vegan (more Paleo), but I do want to significantly cut down on our meat consumption.  I don't like beans much and prefer low carb, but from what I've seen so far there are some great recipes posted here that tick all the boxes!

My wife invented a pretty sweet vegan pizza dish that we regularly eat, roasted veggie/hummus pizza.

What you need first:
- Whip up your favorite pizza dough recipe (flour, yeast, olive oil, salt, and a bit of sugar).  If you really want to kick up the flavour, add some chopped fresh garlic to the dough.
- Whip up some hummus (chickpeas, tahini paste, garlic, olive oil, salt)

What to do:
- Roll out your pizza dough on your baking tray/pizza stone/whatever pretty thinly.
- Lightly drizzle olive oil over the top of the pizza dough.
- Spread hummus evenly on top of this to a depth of about 1/4 inch.
- Cut up some peppers, zucchini, mushrooms, tomatoes, onions and stick them in a bowl.  (Eggplant, broccoli, cauliflower, etc. could probably also be used.)
- Drizzle some olive oil over the stuff in the bowl and toss with a little salt, garlic powder, and rosemary.
- Put the veggies on the pizza and bake at the hottest temperature your oven will go to.  Ours will hit 550 and it takes from 8 - 15 minutes depending on how thickly you heap the toppings.


It's like a delicious cross between flatbread with dip and pizza.

My favorite vegan cookbook is Isa Does It- lots of pictures, broad selection, and most of the meals are simple enough to make on a week night. We also enjoy Thug Kitchen, Chloe's Kitchen, and Veganomicon. In Isa does it fave recipes are: down home curry, Ghana Saag, wild mushroom stew, and puffy pillow pancakes. In Thug Kitchen, the Adobo Mayo sauce is mind blowing, and the Vegetable Dumpling soup (while taking hours to prepare) is hands down the best soup I've ever had.

What worked for me when I first went Veg, was to try a new recipe every week- I was living by myself, so I would cook 3-4 meals a week, and eat the leftovers for lunch and maybe supper the next day. Some people may disagree, but I would really try to avoid using a lot of vegan substitutes when you are first starting out. I think you will learn a broader array of recipes, try new foods, and will likely be eating healthier if you don't immediately start in with the grain meats and Daiya type products. That being said, we just received a shipment from the Herbivorous Butcher this morning....

Yesterday I made black bean stew over brown rice.

1. Make brown rice in instapot. Used veggie broth  instead of water.

2. Recipe for black bean stew

Ingredients
-- 2 cans black beans
-- 1 small can diced mild chiles
-- 1 can diced tomatoes
-- 1 large red onion diced
-- 1 large green pepper diced
-- 1 jalapeño de seeded and diced.
-- heaps of garlic minced.
-- 2 tsp olive oil
-- seasonings-- I used done store bought taco seasoning and added some additional salt and garlic powder
-- chopped green onions and cilantro for garnish

Start on the rice first.

Sauté red onion in olive oil for a few min in a large skillet. Add green pepper and jalapeño and sauté a little more. Add garlic and continue sautéing. Add tomatoes and chiles. Bring to simmer. Add seasonings and black beans. Continue simmering till stew like consistency. Add water or veggie broth if needed. Total cooking time about 30 min.

To serve:

Put rice on plate.

Put heaps of stew on top of rice.

Put garnish as needed.

Enjoy.
