Anyone make an amazing sandwich bread for peanut butter and jelly? I have a recipe that I love, but the crumb doesn't hold up to smears of PB&J. This would be specifically for my kids. It would need to be white, reasonably dense, and thinly crusted. It pains my soul to say this, but, just like Wonder bread.
Anyone have a great recipe they wouldn't mind sharing?

I don't know if you can make Wonder Bread without industrial chemicals and machinery.
I like Potato Bread for PBJ. The potato cuts the gluten of the bread and gives it a nice soft texture.
1.75 C Water
1 C Shredded Potato
2 T Butter
2 T Sugar
1 T Salt
Heat in a small pan until the potato is soft. Cool to at most 110
4.5 C Flour
2 T Yeast
Mix that together and add your liquids. I used the Kitchen aid. You may need up to 1.5 cups of flour to get to your consistency. Knead 5 minutes until it all comes together in a cohesive ball.
Let rise 1 hour, shape into 2 loaves, let rise 1 hour. Bake at 350 for 30 minutes.
