Ideas for using almond meal leftover from making almond milk?

I've started making my own almond milk, and love the fresh flavor of it, but am amassing quite a stockpile of the almond meal left over from straining the mixture.

I've thought about adding some of it to granola, but the main granola eater in the house (DH) is protesting.  For no good reason, but whatever.

Does anyone have any good uses for this?  And recipes?  FYI - it already contains vanilla essence and date bits as part of the almond milk making process, so it's vaguely sweet.

Would probably work well for making macarons (note: different than macaroons). I also add almond meal to my chicken tikka masala (Indian food) recipe, but I'm not sure how much the sweetness would impact that; might be good.

Smoothies
Add to baked goods - cookies, cakes, muffins, streusel toppings
Add to oatmeal or other hot cereals
Have you tried drying it out and toasting it?
Yogurt topping

What is DH's complaint? That may help to come up with ideas.

the possibilities are endless. I love almond meal pancakes or use it to replace breading.  Check out some paleo or gluten free sites for recipes that use almond meal.

Boneless chicken breasts. Dip in buttermilk or egg, then a 50/50 blend of almond meal and Parmesan cheese. Bake at 350.

I make this granola with my almond pulp (it's the main ingredient, not added to the oats or whatever you would normally use).  I think it's really good (I don't add the dried fruit).

Great ideas, everyone, and the recipes in the links look fantastic.  Can't wait to try them.

I'm not sure what DH's objection is to adding it to his granola, but it's not a battle I want to pick, so I'll just find other uses.  Looks like there are plenty of them.
