I try to do all (or most) meal prep in one night at home. For me that coincides with the night before trash day, since I live in a bear prone area and then can get rid of most of my food waste the next morning. Ill cut, chop, portion and cook items all at once without much thought to what day/meal I will eat them, but this makes ti so much easier to grab and go during the week. I find that way I don't feel like I am being limited to what I wrote down on a meal plan.
I also will make one of two casserole dishes that I really like and will last throughout the week. Although I don't eat strict paleo anymore, two of my favorites, which are cheap and delicious, are listed here:

We aren't paleo and her Buffalo Chicken casserole is a regular around here! SO GOOD and easy to make!
