I made 4th of July veggie burgers for the family

This year I wanted to bring veggie options to 4th of July with my family but I got really depressed when I thought of the cost of pre-packaged veggie burgers. So instead I brought ingredients (my sister already had some of the ingredients needed) and made them from scratch. It turned into a fun family activity to find out if they were any good (they were delicious). And it took the pressure off my overworked sister & bro in law who have 2 little kids for me to make the main part of the meal. Each burger was less than $1. OP, have you seen the thread for making hamburger buns? Also another VB recipe or two there. Here to tell you, the bun recipe is totally do-able!

Yes I admit that I found that post a little intimidating. But exciting nonetheless... Perhaps I will brave it for our next family bbq!

Related -- I love this "Grilled Portobello Burger with Basil Mayo" recipe from Weight Watchers.  It is seriously delicious!

Recipe Details

Description:  Savory grilled mushrooms are piled high with the usual burger fixings and a very tasty basil-mayo sauce.

Ingredients:
1/4 cup basil, fresh, chopped
3 tbsp light mayonnaise
1 tsp apple cider vinegar
4 medium portobello mushroom caps, equivalent to 1 pound
4 sprays olive oil cooking spray
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste
4 items thin sandwich bread
3/4 cup roasted red peppers (packed in water), about 4 pieces
4 slices uncooked red onion
4 pieces lettuce

Instructions:
(1)  Heat grill or grill pan.
(2)  In a small bowl, combine basil, mayonnaise and vinegar; set aside.
(3)  Lightly coat both sides of mushroom caps with cooking spray; season with salt and pepper.
(4)  Grill mushrooms over medium-high heat, until just soft to the touch, about 6 minutes per side.
(5)  To serve, split rolls and toast on grill. Spread a heaping teaspoon of basil mixture on top and bottom halves of rolls. Layer each bottom half with a mushroom, pepper, lettuce leaf and onion slice; top with remaining half of roll and serve.

Yields 1 burger per serving.
