My typical morning breakfast is a mix of:
- puffed brown rice (or puffed kamut)
- some kind of nut (pecan, almond, hazelnut, or walnut)
- some kind of seed (pumpkin, sunflower, or chia)
- shredded coconut (optional depending on availability - I have a bunch of bags in the freezer from my building's coconut crop this summer)
- some kind of fruit (usually strawberries with optional blueberries, but could also be peaches, bananas, mango, anything that goes well with yogurt)
- yogurt (I go whole milk organic on this one, and please don't give me any of that Greek stuff - yuk)
This is my breakfast staple. I mix it all up and eat it on the way to work while I am driving (don't tell anyone). I vary up the grain, nut, seed, and fruit combinations depending on my mood and what I have available. I like to keep it varied.
On weekends or other weekdays I may vary it up a bit with French toast, almond milk fruit smoothies, omelettes, nut butter on rice cakes, oatmeal, quinoa "oatmeal".
