Henderson, NV (near Las Vegas) - suggestions for frugal fun?

I'll be in Henderson, NV (near Las Vegas) for a weekend next month and looking for frugal fun ideas. Already on my list is Red Rock Canyon and I'd love to support local community organic food/gardening efforts, indie bookstores, etc. Thanks for any suggestions!

Check this out, http://www.everytrail.com/guide/goldstrike-hot-springs. It's off the Tourist radar.
Don't forget to go to the Damn and walk across the bridge.

The cheapest places to eat are the Village Pub and Poker.  You don't have to play Poker, but the daily special is usually $5 and more tasty food than you can eat.

Everything in Vegas is trucked in, it's the desert. There is no "local" food.  The best quality stuff is in the high end casinos and you are going too pay for it. 

At night, go to Green Valley Ranch and you can sit beside the pool in  cabanas for free.  It's a great view of the skyline.
