Title: Fresh tortillas from Costco
Post by: Trudie on February 07, 2016, 01:22:06 PM
Has anyone here used the fresh tortillas from Costco?  I keep hearing they're a revelation, but haven't quite figured out how to bring home such a large supply of them and use them up.  I know freezing is not recommended.  How long do they keep in their individually wrapped packages in the fridge?

No answers, but following. Are these corn or flour tortillas?
If they are corn, you could make chips ....

We freeze tortillas pretty regularly, and I haven't noticed anything wrong with them.  Obviously fresh made tortillas are going to be the best, similar to fresh bread, but frozen is the next best thing.  I'm not sure why they wouldn't be freezable, they're flour fat and water.

You can make chips with flour too.

Tortillas are pretty easy to make. Unless you are preparing for a party, I wouldn't buy them.

They are good!! You can make pizzas out of them. They are a great thin crust style and can be topped with whatever you like and baked from raw for like 12 or so minutes on 400... They last a while and can kind of dry out but i think we get the money return on them for frozen bean cheese burritos , pizzas and chips....

Flour and best ever. They come in a sealed pack of 50, uncooked. About 10-20 seconds on stovetop and wow! They also sell a big bag of Chihuahua cheese (I try not to picture those poor little dogs with the milk suckers attached) that make a banging quesadilla when combined.

I LOVE costco fresh tortillas. They are indeed a revelation. I am also a 1 person tortilla eating household, and I manage to eat all 50 before they go bad. Tips:

1. Freeze half. I know it says not recommended, and the first half is a tad better, but they are still pretty damn tasty after being frozen.

2. I know it says that once you open the package of 25, you have some insanely short period of time in which to eat them. That is a lie. They are tastier/fluffier/cook faster at the beginning, but I've taken a full 3-4 weeks to finish a package and the last ones are still totally delish.

3. If you worry you're pushing it, cook up a bunch at once and put them back into a zip top package. Ta-da! You have a new package of pre-cooked tortillas.

4. Don't use the zip top package they come with. The plastic around the zipper breaks very easily, and the zipper itself is impossible to open, so unless you're much better at these things than I am, it won't really have a good seal.

5. Cook up a bunch (like 10), make a pan of enchiladas, put it in the freezer to thaw and bake later.
