Quinoa and Rice, deals and how to use in a meal?

At local Wegmans, the best deal was: Arrowhead Mills Organic Quinoa, Whole Grain  14 oz @ $4.99  => $5.71 / lb

They sell bulk at $7.99/lb and more which is odd.

Where do you buy Quinoa and rice and at what price?  At my local sources it costs $2.08 for a boring meal of 600 kCal of Quinoa.  How do you improve it for taste and cost effectiveness in a dinner meal?

I think this is only like 200-250 kCal right?  Its hard to estimate but the base quinoa should be about 160 kCal for 1 cup.

Fancy seeing this in a post today. I ate Quinoa and brown rice this morning.

My wife will throw a 50/50 mix of quinoa and brown rice in our rice cooker. We will eat it simply in a bowl by itself, or add a meat to it to make it a meal.

Brown Rice at Fred Meyer for $1/lb. Available in 1lb bags sometimes for $1.19, or 2lb bags for $1.99.

Quinoa at Fred Meyer. Bought the last couple bags on clearance for $2.69/lb.

We buy Quinoa at Costco though to be honest, I have no recollection of what I paid last time.  We use it in all sorts of dishes.  One of our recent favorites is Broccoli Quinoa Casserole which is a surprisingly hearty dish: http://pinchofyum.com/creamy-chicken-quinoa-broccoli-casserole

We also use it in warm and cold salads, in place of rice for serving gumbo, and in a very tasty Quinoa Turkey soup.

What you need is a 25lb bag of pinto beans from costco for $15.  Right now I'm eating my staple of quinoa and beans tossed with some kale and steamed brussel sprouts and broccoli and seasoned with tumeric, garlic, and hot sauce (tapatio).  It's delicious, healthy, and really powers you through the day!

Our Costco does not sell dry beans, only canned. They do sell quinoa pretty cheap.

Good idea going 50/50 quinoa/rice for texture and lowering the cost. 

creamy-chicken-quinoa-broccoli-casserole looks great although perhaps reduce the amount of chicken a touch. 

No costco around here although my family has a Sams Club membership I may be able to leverage.

You can try a Costco business if there's one close enough. They tend to see a lot of bulk items you won't see at most normal Costcos.
