DIY frozen pizza

I've made pizza myself a could of times and it's always been OK - nice, but I've struggled to get the base to cook evenly and usually end up with burnt bits. Still, if at first you don't succeed, try try try again! I'd really like to make some small pizzas for the freezer - what do I need to know? What's the best way to assemble for freezing? Any common ingredients that don't freeze well? How do I best cook them from frozen? Cling film or foil?

I parbake the crusts before adding toppings (bake for 5-7 min at around 190 C depending on the thickness of the crust). The crust should still be white but should not feel like moist dough anymore. Then top as normal and freeze. To keep it from drying out I wrap it first in cling wrap and then again in tin foil.

To cook, take off the cling wrap and tin foil, and then pop it in the oven for around 10 min until the crust is slightly brown. No need to defrost.

I love homemade pizza - after many years I've finally got a recipe I love.

I usually make the dough, let it rise twice, then roll into a ball and freeze - usually in greaseproof, as I've got tons of that lying around that needs used up (no idea why I bought loads of it, I rarely use it).

Then I defrost  beside the aga (takes about 3 hours) or in the fridge (takes about 8 hours), then roll and make the pizza up. My recipe is passata, chilli oil, garlic, mixed herbs mixed for the base, then topping of your choice.

Occasionally I make up full pizzas and freeze, but they don't fit in the freezer well - I think you need a flat space in the freezer or something you can lie them on.

If they are burning, it sounds like the temp may be too high - I find lower does pizza better, like 180 - 200 rather than the 230 lots of people suggest.

Costco has a 4 pack of Kirkland frozen cheese pizzas for $10. I buy that and then dress them up with my own toppings. It's usually a combination of leftovers. It's not worth it to me to try to make them 100% from scratch.

Homemade pizza is the best. It’s a date night thing for DW & me. We usually make it fresh but have found that freezing the dough ball like D&D suggests works.

I was just thinking about more ways to avoid going out or buying prepared food for lunch...and I make pizza a lot, so great timing.

Finally...in my experience with frozen baked goods, cling film is definitely the way to go for preservation (though ziplocks might do the trick over the short term).
