Title: Cooking with what's in the fridge - what to do with head of broccoli

I'm spending an unseasonably cold day inside cooking up what's in the fridge.  Any ideas for a head of broccoli?  I don't like it raw.  Of course it would be most excellent smothered in cheese, but I'm trying to stay on the healthful side.

At the very least I suppose I could blanch it and freeze it until I know what to do.  (I hate wasting food.)

I'd make broccoli soup, because my family loves it, but that's basically broccoli and cheese sauce anyway. LOL

Stir fry?

Sauteed with soy sauce, garlic, and chili paste (or red pepper flakes). Eat it over some brown rice.

Slaw?  Grated broccoli with salad dressing as a minimum.  Yes raw but a bit different.

I would roast it (http://www.marthastewart.com/338525/roasted-broccoli). It brings out the sweetness and a bit of crunch. It's so good it's hard to stop yourself from just eating it off the pan.

Oy you could stir fry it up (could make a broccoli beef type thing) and serving it over rice.

I have a twice baked potatoes recipe that involves baking potatoes, scooping out the insides, mushing the insides with chopped broccoli and some cheese, and putting it back in to the skins to bake again.

Super delicious, EASY method:

1. Place entire head in a big pot.
2. Add one cup of water.
3. Steam
4. After a minute, sprinkle salt on top.
5. When bright green and fork tender, remove, place on plate, and eat with knife and fork.

I will occasionally sit down with a block of cheddar and a head of broccoli in front of the TV and just called it dinner . . . but I'm not terribly picky/high maintenance when it comes to food.  It's just fuel.

Yes, I'm not too keen on raw broccoli either, but if I run it through my food processor slicing blast, I end up with thin shavings (mandolin would work fine, too) I makes an amazing slaw. The texture change makes a big difference. I then put a vinaigrette, chopped nuts, sesame seeds, dried fruit such as cherries, raisins, or craisins, sleep fed green onions. It's delish;  I can eat a huge bowl. Great with a mix of broccoli and cauliflower, too.

I also throw chopped broccoli into pasta water during the last 4 minutes or so of cooking and then eat it with the pasta. I really like it with julienned carrots and peanut sauce.

Roasted is always my fallback, though.

Do you also have tofu or chicken?  We love this recipe for general tso's, and it calls for broccoli.  We take it easy on the red pepper flakes though...

Saute it in olive oil with some onion.  Salt, pepper, and paprika just before it's done.  Also good with some bell peppers or those orange and red mini peppers.

Broccoli-potato soup, or broccoli pesto. I'm not a huge broccoli fan, but I LOVE broccoli pesto.
