Title: Chinese recipes

Hey,

I've had the biggest craving for good Chinese food. The dish I really am craving is Kung Pao Chicken, largely for it's spiciness coupled with peanuts, I know it's a stereotypical dish, but it is among my favorites. I have never been able to make it a very good Kung Pao Chicken, I can make a decent one that beats most restaurants, but I would like to make an excellent one. Does anyone have a recipe that they would care to share? Or any other Chinese dishes?

I haven't been to a Chinese restaurant in a few months, and I would prefer to keep it that way.

Sorry, no Kung Pao, but I make this (http://noblepig.com/2011/01/sweet-and-sour-pork/) sweet and sour pork fairly often (using whatever veg I want, and often pineapple).  We had it tonight, actually - leftovers in the fridge!

I've not made the kung pao Sam, but Kenji knows his business and is if doesn't seem too putzy, I'd go for it. I think his fresh chili paste did the chili con carne recipe is mind blowing for anything you'd use chili powder for...
