cell phone/plan switch

I have a non-smart phone (no sim card) and want to switch service to my wife's old iPhone3 - she's using a newer iphone.   Can I order a $10 airvoice plan for the iPhone, have my existing phone# ported to the iPhone and then just cancel my existing Verizon plan??  If so, can someone just outline the basic steps I need to go through to get this switch done?    I am month to month with Verizon currently.

Since this keeps coming up on occasion and even though all the information is available on the forums but scattered about, let's just make a catch-all iPhone switching guide for US mustachians, shall we? Forgive the slightly generic instructions nazalv65, but everything you need to make this work will be here.
