Bike touring trip in New England - where to go?

Already avid backpackers, my SO and I have decided we'd like to do our first bicycle touring trip in a few weeks.  Now we just need to find a good, friendly route to bike, and pick up any advice specific to bike touring.  We are looking at this as a sort of 'entry' into bicycle touring, and we plan on doing a much longer trip in 2017.

Guidelines:
i) a safe, scenic bike route somewhere in New England or Quebec (certainly within a 5 hour drive of QC).  We'd love to do VT or NH.
ii) guestimating we'd like to cover between 30-50 miles per day x 5(ish) days.  A loop route would be best.
iii) camping at night

any advice on where to go?

I'm aware of the route verte and have biked parts of it on day rides - some areas are great and others I wouldn't feel very comfortable on loaded with panniers on a long trip (e.g. lots of closed sections and areas with no shoulder).
I'm looking more for a recommendation from someone, rather than just blindly looking at some maps and thinking "this might work"
