Any Plumbers that can provide career advice?

My husband and I just bought our new home a few months ago.  We love our house and the land we have with it.  We feel like it is a place that we can stay in for a long time.  The issue for us now is getting out of our fields.  My husband works in IT and makes a good salary.  His company raised their matching, after getting rid of the pension plan, to 7.5%.  He has about a year and half until he's fully vested, but he doesn't like working in IT.  He's wanted to get out for while, but the money has been the biggest reason for him to stay.  He wants to do something in the trades and is heavily considering being a plumber.  He loves working with his hands (he used to work in construction), so he hates sitting in a cube all day.  We spoke with the plumber who came out and did some work for us and he truly believes my husband would be great at it, as do I.  We know you have to become an apprentice under a master plumber for 3 years before you can become licensed.  It's also our understanding that he would only make about $25K a year those first 3 years.  This is a vast difference in what he currently makes, but we bought our house knowing that either one of us could take on the mortgage if something happened to the other or their job.  Is there anything else we should be aware of when it comes to plumbing as a career or do you have any advice for someone who wants to get in the field?
