Ps. Sorry for the poor quality picture, I snapped it with my phone at a red light right as it was turning green.

Now I'm stuck trying to figure out what it really means.

Plate's a holdover from their Pontiac Fiero?

FI Error As in: my car is one of the reasons I'm not financially independent, but I'm too stupid to sell it.

Maybe he bought it cash, not like it snows in AZ and they get decent highway mpg :P
plus I have a very soft spot for mustangs.

That's just your reading, though. FI as an acronym for financial independence is hardly common usage, except except among the few thousand readers of this and similar blogs.

I'm guessing it refers to fuel injection error (ECM codes?)

It is true, what the intended message was is very much up for debate. However whether intended or not, I am fairly confident is saying that the purchase of that vehicle was likely an "FI Error"

Figured I'd chime in. I don't have pictures but over the past year or so I distinctly remember two license plates that made me chuckle.
Both were 'low-end' BMWs (the irony being that a 35k luxury vehicle is considered low end)
One license plate was 'YSAVEIT'
and the other license plate was 'CUZYOLO'
