Didn't have any leftovers (my usual lunch), so I grabbed a couple frozen home-made burritos out of the deep-freeze to microwave for lunch.

Homemade frozen burritos? Nice.

Didn't pack lunch - but ate at home (snowday!). Leftover refried beans made into nachos. YUM! I made beans yesterday and had nachos for lunch and dinner yesterday, and lunch today. Cheese, lettuce, chopped tomato, salsa, sliced olives, and hot sauce on top.

It's awesome!  I can't believe I didn't think of it before now, but sure glad I did.  My wife (currently on mat leave) finds them convenient too, when she needs to grab a bite in the brief moments of peace when the kids are both napping.

It's super easy to make up a big pot of filling, grab a bunch of tortillas, and get to wrapping.  Better tasting than the convenience store ones, much cheaper, and probably better for you too!

I make a batch of burritos once every week or two. They have quickly become my go-to freezer meal. So easy to grab on the way out the door and reheat at the office.

Add a few avocado slices and your favorite salsa to each burrito.

Leftover roast ham, pommes dauphinoises, peas and asparagus as the main.  Chopped strawberries, cucumbers and a little container of pecans for a snack.

Last year, I started wrapping my homemade frozen burritos in collard greens (or broccoli greens) instead of tortillas (lowers the calorie count, and might be cheaper as I can get 8 wraps out of $2 of greens, and I was paying more for XL tortillas).

So excited to be back at work today after a week out sick. Today I packed:
Large green salad, with leftover cold roast potatoes - yum!!
Oil/balsamic/Dijon mix for dressing
Leftover ham steak from the freezer to top it
Apple
Carrots
Homemade 'Larabar'
Homemade yogurt, with a dollop of homemade apple butter

Breakfast: oatmeal with peanut butter and mixed frozen berries
Lunch: two egg salad sandwiches
Various snacks: banana, pear, chocolate-covered almonds, cashews


I'll probably still be hungry and might have to raid the junk food machine at work. This is an area of improvement for me. ~sigh~

For my love (I'm still on the job hunt) I made 3 sandwiches:
Ham, cheese, pickles (are required)
Out of greens now but normally he likes a salad on his sandwich
And Greek yogurt mixed with pesto powder for dressing. Sounds strange, but it's really good!
Last week I made my first attempt at homemade granola bars so he's got enough of that for snacks. Were cliff bar fiends and I'm trying to make a good substitute. If you're interested:
Oatmeal
Peanut butter
Almonds
Sunflower seeds
Flax
Chia seeds
Steel.cut oats
And raisins for a sticky sweet glue

All in the food processor until its basically a dough. I'm very excited about the no added sugar, as that's one of my weaknesses. We both think they are really yummy!

Breakfast: Gluten free bread with peanut butter
Lunch: ground beef, tomato sauce (basically spaghetti sauce without the pasta)

I'm gluten free/paleo due to gut issues plus trying to also lose weight the next 2 months.

Lemongrass chicken eating right frozen meal. 230 calories. A snack bag of mini lorna doone cookies 100 calories.  That should be plenty as I am in the office only 6 hours / day. I work from home early mornings and into the evenings.

I also brought my 6 pack of unsweetened lipton tea which will last me two weeks.

I have a tiny fridge at work for my food stache:)

Well, I brought lentil and hamhock soup for lunch, but ended up eating the Hail Merry Meyer Lemon tart and some of the salami and fancy cheese I'd planned to stash in the fridge as emergency food, along with some leftover sauteed snow peas.  Ooops, will have the soup tomorrow.

Yesterday I was at an event, so ate in the hotel restaurant at lunch - salmon and veggies.  But did eat dessert.  And a pastry at breakfast.  Not a good day, food wise, in relation to my weight loss goal - but free!

Working from home today, have some chicken soup ready for lunch and some fruit if I want a snack.

It's finally above freezing in my neck of the woods--highs in the 50s this week, so I'm dying to break out the grill! Need to get on that.

Homemade broccoli cheese soup, beer-cheddar-garlic muffin (also homemade), green salad with garlic dressing.
For a snack I have strawberries.  If I get super duper hungry, I can grab a boiled egg from my cafeteria, but hopefully it won't come to that.

Penne pasta with sauteed vegetables and shredded chicken-will use some of the office stash of chili garlic sauce for some added flavor. Also brought my own beverage, seltzer made with my new (bought off craigslist for 1/2 price!) soda stream! I am a total lemon lime seltzer addict, so hopefully this will turn out to be a good investment-certainly less wasteful than continuing to buy those 12 packs of cans!

 Did not bring a snack today, but have been nibbling on my desk supply of granola all morning.

PB&J sandwich
1 hard boiled egg
Cottage cheese
string cheese
Prunes
Mixed berries w/ plain yogurt and homemade granola w/ lots of almonds

I don't think it's necessary to eat this much, but I go to the gym most days. Trying to pack on muscle. I think it's working as well as it could for someone with my genes.
