Rotisserie Chicken - Endless possibilities

It's amazing how many ways you can use a good old rotisserie chicken from the local grocery store.  Costs under $5 and it's already cooked! Get home, cut some pieces off, add in some barbecue sauce, onions and peppers and it makes a great little sir fry.  The next day we cut off some more, add in some leftover sautéed green beans and rice, other misc veggies, an egg and we make chicken fried rice. Today we cut off some more to make some cheesy chicken quesadillas.  I suspect I will make a chicken salad sandwich tomorrow and the remaining will be used in a chicken soup.  Ironically, we usually don't even eat it as actual rotisserie chicken.

We make a point of buying one each time we go to Costco, even if we don't need it for a meal when we get home -- mostly because I want the carcass to make broth with.  We have big eaters here (young adults), so we don't get quite as many meals as you do. Indeed, if both young adults are home we get one meal: I eat half of one side of the breast, DH eats a leg, a wing, and the other half piece of breast, young adult #1 eats one side of the breast, and young adult #2 eats a leg and wing.  At that point I can pick the carcass for soup meat, and make broth.  But it's still worth it for $5.  With young adult #1 away at college I can set aside one side of the breast, and share that with DH for one more meal, or shred it and stretch it into two more meals (yellow curry, chicken quesadilla, etc.)

I bring it home and pick it apart warm. I eat some of the crispy skin and breast meat as I go for my lunch, but most of it is put in the fridge for salads throughout the week. I keep the juices and fat from the bottom to make ramen with, rather than fussing with the bones.

Oh, I love them, but I don't buy them much anymore since I'm mainly cooking for one. It's *hard* (not really) to get through one myself. I think of all the meals I make with it I like the last one best: chicken soup. I leave all the bones and bits in. Yum.

I have four children, and always buy 2 of these chickens from sams club for five dollars each every time I go there. These chickens, like most food in my house, disappear quickly.

This makes me wonder what the difference is between costco and sams club chickens...on paper they seem pretty similar. The costco is much farther away from me so I'm not going to switch just for chicken...but it does make me wonder.

I have some white meat from a Sam's club chicken in my fridge right now . . . and y'all have inspired me to make some curried chicken salad.

$7.00 here in the Great White North.  I buy them only on occasion, because they're very salty.  Tasty though.

Awesome! I guess I will keep getting the chickens from sam's club. My kids just ate another rotisserie chicken from sam's today. They love their chicken.

Had to cut the recipe in half based upon the amount of chicken I had, but we still got four good sized bowls of soup from it.

I added kale to the cooked veggies right before pouring in the broth and garnished with a swirl of olive oil, avocado slices and parmesan crisps. Mr. Zamboni added siracha, of course. So good!

It was a little too salty (probably because the recipe calls for raw chicken and I used my Sam's club chicken). I'll just add less salt next time. Seriously I may go buy a chicken and more avocados again today.

It really is hard to beat when you consider the cost of uncooked chicken breast not on sale to a rotisserie chicken. At our Food Lion I get about 1.5 pounds of meat off of a $6 chicken. It's like the cooking is almost free. Then add the fact that uncooked chicken is often submerged in water before it is frozen so some of the weight is water weight. I can't tell you the last time I weighed a package of chicken breasts and it was actually how much the package says it is.

I don't like cooking, and having one of these chickens around makes everything easy.  I can just microwave a leg with vegetables in a bowl. No pots, no pans, no thinking, no prep. Great protein and filling.  Luckily I live near a deli who is picky about the kind of chickens they buy (organic, humane).  I don't mind paying the extra since one chicken is about 8 meals.

Even at Costco in Canada where its closer to $8-9 I am constantly amazed at how versatile it is and how many meals we get out of it in one week.
