Easter Egg Recipe Challenge

Whether you celebrate Easter or not there is no denying $.99/dozen egg sales! Target just to name one. Give ur best egg recipes/suggestions in honor of this week's eggbundance! I'm thinking quiche, Amish potato salad, deviled eggs, egg salad [sandwich], omelets, what about u?

Great topic! 

You can make all sorts of freeze-ahead breakfasts in a muffin tin:

- Mix eggs, a bit of ham or bacon, maybe some green onion, maybe some tomato or salsa /place in a sprayed muffin tin
- Or place a small circle of bread into the muffin tin /use the same eggs as above 
- Or arrange a small tortilla or a piece of ham into the muffin tin /use the same eggs as above
- Or squeeze hash browns into a little "nest" /use the same eggs as above

And bake 15-20 minutes at 350 degrees. 
Freeze them and save in a ziploc bag.  Great for a FAST breakfast. 


Eggs Benedict: 
Bottom layer -- traditionally it's an English muffin, but we prefer a soft roll torn in half
Meat layer -- traditionally good quality ham, but we sometimes sub in a thin pork chop or fried chicken
Top with a poached egg -- no substitutions allowed! 
Hollandaise sauce -- again, no substitutions allowed

Quiche -- if your husband won't eat it, tell him it's Egg Pie and watch it disappear -- good warm or cold:
Start with a pie crust -- I use store bought because I'm just not skilled in pie crust -- pre-bake your crust
Mix up: 4 eggs, 1 cup milk or Half and Half, 1 cup cheese of any type, Salt, pepper, maybe some paprika
Add in whatever bacon, ham, green peppers, green peas, asparagus, or whatever leftovers you have -- I like lots of mix-ins
Bake 30-40 minutes 'til knife comes out clean at 375 degrees

Alternate: Crustless individual quiches ready to take to work:  Spoon egg mixture into sprayed short Mason jars. 

Huveros Rancheros -- this makes a nice dinner:
Two small corn tortillas for each person, warmed
Place one tortilla on the plate, top with refried beans, cheese, salsa (or other Mexican sauce)
Top with second tortilla, top with the same items ... and a poached egg on top

If you have too many eggs, you can beat them (in twos) and freeze them in a small ziplock.

Ramen noodle egg drop soup.
You can just drop eggs to poach in the ramen noodle soup, but I prefer to throw out the seasoning package and sauté some onion, garlic and ginger, then add real stock and bring to boil. Add spinach and noodles breaking up the noodles ( I use one package per person for a full meal and half for a side dish), once the noodles are soft about a minute later, add one egg per person, turn off the heat, cover and allow the eggs to cook to your desired firmness.

I also like to poach eggs in canned tomatoes, serve with tortillas, or pitas. Or fry them up and make a grilled egg and cheese sandwhiches!

MrsPete, I love ur ideas & the details u put into each! So far I've made crustless spinach quiche, Amish potatoe salad & hard boiled eggs. Will have to try some of urs soon! Thanks!

Deviled eggs all the way! They are such an easy snack to make even one at a time. Just take your hard boiled egg, cut in half, and scoop out the yolk. Mash it up with a bit of mayo, dab of dijon mustard, salt and pepper and stuff it back in the white. Top if paprika if you're fancy. Yum!

Take your deviled eggs a step further:  Top them with just the slightest bit of finely diced country ham.  YUM. 

I made a new egg casserole last night -- supposed to be a breakfast casserole, but we like such things any time -- quite tastey. 

Sausage Biscuit & Gravy Casserole

Chop 1 can of Grands biscuits into quarters, drop into a sprayed 9x13 pan
Top with 1 lb cooked, crumbled sausage -- I used HOT sausage and was glad I made that choice
Top with 1 cup shredded cheddar cheese
Beat 6 eggs and 1/2 cup milk, pour over biscut /sausage mixture
Prepare a package of McCormick's Sausage Gravy, pour over the casserole

Bake at 350 for ... well, the recipe said 42 minutes, but the middle of mine was not quite done -- I'd say 50 minutes at the least, and I may turn up the heat to 375. 

It made more than we could eat, and this type of thing doesn't save well.  Next time I'll use smaller biscuits instead of the Grands and will decrease the rest of the ingredients by 1/2.  I'll measure out 1/2 the dry gravy mix and return 1/2 to the package for next time. 

Very down-home country and quite filling.  My husband declared he wants to have it again SOON.  Said is several times.

That sounds good! I thought this thread would be more popular LOL! I guess I thought a lot more people loved eggs the way I do! LOL must be an Asian thing. My mom makes a really authentic Chinese dish steaming eggs and inside is ground pork, vermicelli noodles and scallions! I'm sure there's soy sauce/salt in there, too. It's not a dish you find at the average takeout! Also, Marth Stewart (on TV) is reminding me of soufflé and mousse! Can't forget dessert!!! Hmm, there's also a steamed Chinese cake made mostly of eggs but I was so traumatized when it didn't rise at all the first time I tried, so may not be testing that one out!
