Here's what we have going this week (we have salad with dinner every night)

Saturday - husband & I went to dinner. Kiddos had leftovers
Sunday - I'm making keto hamburger patties with fried cabbage
Monday - a chicken casserole
Tuesday - leftover hamburger patties/cabbage
Wednesday - leftover chicken casserole
Thursday - any remaining leftovers. Failing that, we'll likely do carnitas burritos
Friday - maybe chicken wings?

I finally have something slightly different to post for once so I'll post this week's:

Sat: Ham and Spinach Crustless Quiche, roasted potatoes and asparagus
Sun: Meatloaf and broccoli and leftover potatoes (My son requested meatloaf and wants to make it with me! I hate meatloaf so never make it, I'm not sure where he got the idea but I'm happy to add something new to the rotation.)
Mon: Baked eggs in tomato sauce over grits
Tues : kids eat free night at Max and Ermas :)
Wed: Molasses cured tuna steak, sweet potato "risotto", salad
Thur: Sweet potato/beef burgers and fries
Friday: family pizza night

I probably over-planned, and might need to delete a meal or push Friday's dinner to the weekend so we can eat leftovers, but this week I have:

Last night: Roast chicken, Brussels sprouts, carrots
Tonight: Chicken soup & bread
M - Turkey meatloaf, green beans, roasted potatoes
T - Fried rice with ham & Thai pesto + bok choi
W -Spiced beef with butternut squash,braised collards
R - Spaghetti squash casserole/Italian sausage
F - Chile verde, black beans, cauliflower

Last night:  Grilled pork chops from the half pig we bought last year.  Served on top of baby spinach w/ leftover sides.  Cost $4 for 4 protein portions.
Tonight:  Ham hock from the above mentioned pig and beans in the Crock.  Cost approx $6 for many meals.
Tues:  Venison and Italian sausage meatloaf, side veggie.  Cost?
Wed:  Fish night.  Cost approx $6
Thurs:  A meeting which dinner will be provided.  Cost for my time and fuel for the 1.5 mile drive.
Fri:  Leftovers
Sat:  Out for our anniversary. Cost?
Sun and Mon:  Bachelorette time!  Popcorn, pesto pasta and cheap, frozen pizza, please.    What carbs?  O:)

Monday - homemade pizzas
Tuesday - leftover crack chicken

Thursday - spaghetti & meatballs
Friday - TBD

I'm trying to eat lower carb, so I'll need to figure out what to eat on the pizza night.

I am busy every night of the week these days so thought i'd get back to planning.  We'll see if i can stick to this. Editing to add: looking at this it makes more sense to switch the tuesday and sunday meals as i have more time to cook tomorrow...just means a trip to the store for meat tomorrow morning.

Sun lunch and dinner: leftovers. 1 pork chop, curry, shepherds pie available. Can also do charcuterie and/or tuna salad.

Mon: spaghetti with meatballs, lettuce/tomato salad. Adults might still have leftovers or quick beans and rice.

Tues: southern style pork neckbones, cauli chowder and greens

Wed: quinoa, black beans, raw veg with dressing.  May add leftover meat bits for any complainers.

Thurs: roti chix (take away) with strawberry/spin/chevre salad. Probanly vegetarian leftovers for me.

Fri: curry chicken salad with the leftover roti chix

Sat: thinking pineapple chix with zucchini if they are not tired of chix.  Could change to pork.

Ended up not needing as many meals last week due to unforseen circumstances (good ones) so several meals were bumped into this week/next week.

2 weeks of meal in no particular order:

LUNCH: black bean sweet potato turkey chili, grilled caprese sandwiches

sausage w/peppers and onion
pizza
pasta alla vodka IP
enchilada rice skillet
breakfast for dinner
Jambalaya
Ramen in IP

pasta w/Mom's sauce

Last night:  Corned beef hash (bought in bulk at Sam's) supplemented with Cheetos as an appetizer.
Tonight:  Ground beef and venison tacos
Thurs:  Leftovers
Fri:  Something quick since it's grocery night, either rotisserie chicken from the deli or a frozen pizza
Sat:  Burgers consisting of ground meat with portobello mushroom buns
Sun:  Either a restaurant or DH will grill/smoke something.  Depends if we go riding or not.

Traveling this week, but my meeting is very near my hotel, so I'm hoping to avoid eating out (also have fridge and microwave in the hotel, and brining my coffee stuff).  I'll be near the Vegas strip Friday night and booked a table at Momofuko, which will be a bucket-list dining experience, and probably cost my per-weekum.

The rest of the week will be hotel breakfast, tuna salad for lunch, and something like rotisserie chicken and steamed veggies for dinner.

Last night:  Maple glazed salmon en papillote with leftovers on the side.  $8
Tonight:  There are pork chops in the Crock Pot with a homemade honey brown sugar glaze.  $8 for 4 servings
Wed:  Venison and sausage enchiladas.  Approx. $8 for an entire pan
Thurs:  Leftovers $0
Friday:  Take out from?
Sat:  Benefit dinner.  Dinner is included in the ticket price
Sun:  Beer can chicken.  $7 plus side veggie

Friday - we went out on a date, the kids ate hot dogs
Saturday - egg roll in a bowl
Sunday - I made a fettucine alfredo with zoodles instead. The sauce was great
Monday - leftover egg roll in a bowl
Tuesday - leftover fettucine alfredo
Wednesday - carnitas
Thursday - any other leftovers or carnitas
Friday - TBD

Sun = breakfast
Mon = BBQ Chicken drumsticks, carrots, roasted potatoes
Tue = leftover
Wed = Homemade hamburgers or meatloaf, salad (if meatloaf then mashed potatoes too)
Thurs = leftover
Fri = out to eat (on the road)
Sat = steak, baked potatoes, spinach
Sun = veg stir fry over rice

I am incredibly lazy in some ways and cut corners wherever possible, so I pretty much eat the same thing every day to spare mental effort. My food can also all be prepared using a single cooking item (pressure cooker), which minimizes washing afterwards. I buy and prepare the following each Saturday, which lasts me for 6 days (inevitably someone brings food into the office or whatever, so I only bank on 6 days per week rather than the full 7):



Meal #1: Just some porridge stock, poor boiling water in there and it's done. Desiccated coconut is underrated in the frugal world when you consider calories / £. Preparation time: 1 minute.
Meal #2: Seems to last in the fridge for the entire week, so I batch cook it and store in containers for each day of the week. Preparation time: 1 minute (microwave)
Meal #3: Basically pour all required contents into my pressure cooker pot, frying the meat first of course. This is my most labour intensive meal, but I save time by pre-chopping all greens and pre-cooking all beans on the Saturday. Preparation time: 15-20 minutes cooking, but only like 5 minutes actually require input (stirring).

Optional #1: I sometimes buy a jar of peanut butter each week (70p) for quick snacking if the regular meals doesn't satiate me, it has an impressive cal / £ index.
Optional #2: I can also throw in some supplementary foods to cover against micro-nutrient deficiencies if the budget allows. Marmite is a ridiculous source of B-vitamins for example.

Sunday: pork mix, nopales salad, avocado/red pepper/carrot, cooked greens

Mon: leftovers galore...pork, fish casserole, lentils, greens, nopales

Tues: pork loin with cauli and sweet potatoes (lotsa pork this week because the chix was double normal price)

Wed: pizzas with added mush mix, ham

Thu: coleslaw and chicken

Fri: hotdog for kids, kraut, butternut soup.

Sat: lunch: picnic foods needed

dinner: sausage over polenta (this sounded good from horsepoor's post above so i just added this on)  ;)

Monday - pasta w/meat sauce. The meat sauce used two freezer containers of tomato sauce, plus some questionable celery & an open container of marinara in the fridge

Thursday - leftovers or something from the freezer
Friday - pizza

DH is out of the country for a few weeks, so just feeding myself.  This week is busy hosting/running/teaching a field class at work, so I'm prepping today to make sure I have grab-and-go breakfast and lunch, and something easy for dinner.  Baking bread and making tuna salad and egg salad and packing up yogurt/berries/nuts for breakfast.

Sunday - Salad, salmon
Monday - Salad, salmon
Tuesday - Host instructors for Taco Tuesday.
Wednesday - Roast chicken, sauteed veggies
Thursday & Friday - Leftover chicken & veggies

Tonight: Corned beef DH forgot to put into the smoker early enough yesterday.  $14 on sale.  Fried turnips on the side.
Tues:  In the big city.  Planning to use the remainder of the Applebee's gift card from Christmas. $0
Wed:  Either shrimp stuffed eggplant or bacon wrapped shrimp.  Meh, I'll do both.  Why not?  Approx. $15
Thurs:  Out with friends. $40-ish for DH and me

dinner - bruschetta (olive and artichoke) to use up stale bread, fried eggs, raw veggies and ham sandwiches

Tomorrow(Sunday) -breakfast - pancakes
lunch- fried rice with leftover rice from the burritos, raw carrots, tomatoes and radishes
dinner - pork chops, potatoes, fresh peas (the kids love shelling peas)

to make during the day on Sunday - banana bread and home made muesli

Monday - lunch for me - leftover fried rice, banana bread, fruit
dinner -pasta with gorgonzola, salad


Tuesday - lunch leftover pasta or ham sandwiches, fruit, banana bread
dinner - chicken breasts with soy sauce, ginger, honey etc, rice, broccoli


Wednesday - lunch - leftover chicken, fruit, tomatoes
dinner - pasta with mushrooms, steamed zucchini and carrots


Thursday - lunch - salad with tuna, olives carrots, tomatoes, crackers, fruit
dinner - couscous with leftover chicken and zucchini


Friday - lunch - leftover couscous, tomatoes, carrots, fruit, cheese
dinner - pasta with tuna, capers, olives and anchovies, steamed zucchini and carrots

We are back from a 4 week trip, almost over jet lag but still tired and trying to get back into the routine.

So, I cooked a large pork roast with veg, a big batch of thai chicken curry, a giant vat of Bolognese sauce, 3 cottage pies... I guess I am set for the next 3 weeks. Also bought frozen Aldi pizzas for the kids for the curry nights.

(raises hand)  I am!  I meal plan on my phone over the weekend for the upcoming week.  This week:

Last night:  DH made beer can chicken and grilled the shrimp stuffed portobello mushrooms I'd assembled.  Delish!  $13

It's a bachelorette work week:
Tonight:  Leftover portobello with sauteed yellow squash.  $2
Tues:  Cod (e-coupon) and tempura fried eggplant on the side.  Add $7
Wed:  Atkins pizza.  $2.50-e-coupon
Thurs:  Club meeting night so take out or leftovers here at the office.  $0 or $8
Fri:  Not sure yet
Sat:  Ribeye, sides
Sun:  Grill or smoke something

Lots of zucchini this week, my coworker gave me two giant ones from her garden.  Already had two nights of zucchini as the veggie/side, plus baked 2 loaves of zucchini bread.  That's used up almost one of them.

Still meal planning here:

Sunday - kebabs & caprese salad
Monday - burgers & caprese salad
Tuesday - husband was working late, so I had a Trader Joes frozen dinner + salad
Wednesday - salmon + coleslaw
Thursday - steak + caprese salad
Friday - Pizza (kids). Carnitas for the adults

We have a ton of fresh mozzarella & basil to use up, hence the caprese salad on repeat.

Well, the good news is we are finally able to maintain a food budget around 150 a week (Aussie dollars).  And honestly, my laziness plays a good part in it, the less I cook the less we spend. This week was work hell, so we ate leftover roast lamb Monday (and the husband had the rest of the leftovers in the form of a fried rice till Wednesday for lunch), spay bol for Tue,  taco boats for Wed (same mince, just added beans and spices), hamburgers on Thursday (a bit yuck reduced to, 5$), a really nice osso bucco with ricec(leftover sushi rice from the kid's lunches, ha. Tasted like a risotto when covered with the sauce). We are attending a wedding today, and tomorrow we will have some animal on the Barbie. We recently bought a second hand charcoal barbeque and my husband is obsessed with it. Last week we alsomgrilled some peppers and eggplant and they were more successful than the meat itself. Chargrilled veg is divine.

I also managed to stock up on meat from the yellow sticker dept (free range chicken, yay), tortillas and pears so we shall not starve.

celery is 4.99 a bunch, if anyone is interested. 😣

Does anyone have any recommendations for work snacks, which is not eggs, beans and nuts? I need something high in protein for the 3 o'clock slump. I can't eat cottage cheese 3days in a row.

Building on these ideas: beef jerky (not terribly frugal) or homemade protein balls (I like mine with oatmeal, peanut butter, a scoop of protein powder, & honey - you can also add chocolate chips)

Yesss, I forgot the tuna, I used to have that in the afternoons. Thanks for the ideas. And I might be able to manage natural peanut butter. I react badly to some additives. Or practically anything, even chicken soup makes me sick these days, not sure why. I am contemplating a vegan diet for a few weeks, or even a few days, to see if it makes a difference. I am currently making a potato cauliflower curry overnight in the slow cooker, if I manage to eat that, the next few days are covered. If i am unwell, its a potato, sweet potato, spinach week.I have ravioli and cottage pie in the freezer for the troops. Thursday will be satay chicken (or can gado gado for me), Friday is pizza night (I will have potato and rosemary as a topping).  I also have some backup burgers for the family.

any kid friendly meal ideas, please?
