And here goes 2019!

Saturday: Lemon Rice soup w/ Chicken,  roasted tomato slices
Sunday: Grilled Cheese and Tomato Soup (using homemade super veggie tomato base)
Monday: GF Penne with pancetta and spinach sauce
Tuesday: Meatball subs (using more of the veggie/tomato sauce) and roasted broccoli
Wed: Waffles and fruit salad for supper (trying a new recipe that hides pureed white beans in waffle batter as neither of my children will touch a bean with a 10 foot pole)
Thursday: Pepperoni Pizza Pasta Bake (using rest of veggie/tomato sauce)
Friday: Pizza NIGHT!

DS asked for a piece of broccoli with his breakfast this morning so I'm starting to be hopeful that we've added a veggie to our "approved" list (which is much shorter than I'd like). And obviously all those carb meals use GF flour, pasta or bread for DS where needed :)

Starting a little late this week. Trying to eat the pantry/freezer and limit shopping to a few fresh items:

T - Meatloaf, broccoli, potatoes
W - Red lentil dal, butter chicken, roasted cauliflower cabbage (the lone cauliflower at the store was a giant organic one for $9)
R - Gold flannel hash, eggs
F - Spaghetti squash with meatballs and sauce
Sa - Mapo tofu, rice
Su - Black bean soup, homemade sourdough

Meals for the next 2 weeks (only 10 because we often have leftovers)
Breakfast: pumpkin muffins, blueberry-banana oatmeal bake
Lunch: chicken sausage apple sausage bake, chicken pesto sandwich

Dinners:
pasta alla vodka (instant pot) -- new recipe that was GREAT!!
shrimp scampi (instant pot) -- new recipe that was a loser haha
whole chicken (instant pot) with veggies
Mongolian Beef w/ rice and broccoli
quinoa chili
enchilada skillet
enchiladas with Mexican rice and beans
homemade sloppy joes on baked potato
honey garlic chicken (instant pot) with rice and broccoli
chicken/sweet potato/broccoli bake

Menu for the week (I plan Friday - Thursday):
-Friday - we had chili, cheese bread & salad that we brought to a condo while skiing
-Saturday - got stuck in a snowstorm, unexpectedly ate out
-Sunday - my 12 year old had to prep a four course menu for his cooking final. We had California rolls, Thai chicken salad, General Tso's chicken, rice & tiramisu
-Monday - Salmon & rice
-Tuesday - leftover General Tso's chicken + rice
-Wednesday - chicken fiesta rice (freezer) + guacamole
-Thursday - Any remaining leftovers, or spaghetti & meatballs or chili (freezer)

I need to get prepped for the next two weeks. I'm out of town for two business trips, and things tend to fall apart when I'm gone, dining wise.

~Wed:  Blue cheese burgers, side veggie. If they have them at the store, I'll use portobello mushrooms as buns.

~Fri:  Take out from?
~Sat:  LC sushi to use up nori sheets in the pantry if they are still good.

Meal planning is my JAM in 2019.  It's an area I've targeted to work on this year.

This week's plan:
Monday-
     Lunch: leftovers from Sunday dinner
     Dinner: Mushroom Stroganoff (which ended up being not terribly good)

Tuesday-
     Lunch: leftover stroganoff
     Dinner: baked ziti and cucumber salad that my mom brought over

Wednesday-
    Lunch: FINALLY the last of the stroganoff
    Dinner: homemade pizza

Thursday-
    Lunch: butternut squash soup (leftover from Sunday) with cheese sandwich
    Dinner: chicken and garbanzo tikka masala with rice

Friday-
    Lunch: leftover chicken masala
    Dinner: I will be the only one to feed, so probably whatever I can scrounge in the fridge - sandwich, fruit, carrot sticks, avocado, etc.

I don't have a plan for the weekends, as I usually grocery shop and meal plan on Saturday and prep stuff on Sunday.

So, this week

For lunches i made an other batch of the Turkish lentil and eggplant stew, this time in the pressure cooker, which was a good move. Yummy.

M. We had a barbeque w lamb fillets, sausages, salad
T. Pasta pomodoro (and zucchini)
W. Picked up a bbq chicken from the shops. Added salad.
T. Sausages again w broccoli and potato salad
F aiming for cauliflower and chickpea stew on rice. There will be complaints. (Jamie Oliver, this is the new recipe of the week)
S. Something on the bbq (it is super hot around here). Pork chops prob and stir fried cabbage.
S. Chicken (on the bbq).


Spent 50 dollars so far. I am aiming for 150 a week. Fruit and veg is super expensive because of the drought. A bunch of celery is 3.80, absolutely ridiculous.

Dinners- chicken & tortellini soup (will probably do this today to use up the rest of a rotisserie chicken); pot roast with potatoes, carrots, green salad; tofu stir fry with rice; pepperoni and cheese pizza with green salad; emergency meal - minestrone soup

Lunches- sandwiches, fruit, carrot sticks, cucumber salad; leftovers from dinner

Breakfasts- for me: plain yogurt + granola; for kiddo: egg & cheese breakfast burrito, cereal.

Another week where I'm traveling, so things are again a bit off kilter.

Friday - I flew home from Tokyo, so I was jet lagged. I had leftover lasagna with another kid. My husband made steak for two people.
Saturday - We had pizza & salad
Sunday - tacos w/guacamole
Monday - kebabs w/rice
Tuesday - I'll be out of town, but the kids/my husband will have leftover tacos
Wednesday - leftover kebabs w/rice
Thursday - I'm guessing the kids & my husband will eat out

I didn't read the whole thread to see if this already came up, but we're planning on starting each week with a fridge full of 1-qt mason jar salads.  In theory I think one large box of organic greens (~$4) can fill ~10 mason jars -- lunch each weekday for the two of us.  Economics isn't the primary driver, but I think the salads should come out to be roughly $1-2/each depending on the cost of veggies and our choices for protein.  I'll follow up here after we've tried it out.

Decided to start with 4 salads-in-a-jar, so we can adjust the recipe if something isn't quite right.  It took a surprisingly long time to chop all the veggies!  I need to investigate whether I can improve that using that salad-shooter-doohickey we have but never use.

I'm in Australia. Celery is off the menu until further notice as it is now 4.50 a bunch. I am quite pissed off about it.

I managed to be under 150 last week. I changed my shopping strategy a bit. Until now, I tended to stock up on things I found at a good price, even if it wasn't on the menu. These days I buy the ingredients only. I put the batch cooking on hold until the weather cools down a bit. It is still school holidays and I can't shop around with the kids, it will be expensive and pure hell anyway. So far, it works quite well. The kids eat heaps of fruit and vegetables and I am not skimping on those.

This week
M. The kids ate leftover mac n cheese from lunch, adults had a vegetarian curry with eggs and ginger rice.
T. Chicken schnitzel, parsnip pure, salad
W. Burgers and salad, flatbread.
Th. Sausages and salad
F. Chicken curry (red lentils, sweet potatoes, rice)
We are away this weekend. Gotta eat some lamb because it's Australia day. I am thinking souvlaki. Will probably eat out one night anyway.

For lunches we are having sandwiches and soup.

S: Salmon tacos

Lunches are always leftovers, usually from the previous night.  Breakfast is oatmeal or cereal, occasional pancakes on the weekend when hubby is feeling inspired.

Mon:  Crock Pot teriyaki pork ribs, turnips
Tues: Homemade baked chicken tenders, spaghetti squash
Wed: Catfish, shrimp, veggie
Thurs: Chicken tenders in Alfredo sauce, leftover spaghetti squash
Fri: Dinner out
Sat and Sun: Not sure yet

Lunches have been baby spinach with whatever on top.  Today's features leftover sushi crab meat.  :D

Progress so far this week has been good!  Only change is that no one was terribly hungry on Tuesday for dinner, so we had a random foods dinner - sandwiches, yogurt, and oranges.

Had my sister, brother in law, and nephew over for dinner last night and ate most of the pot roast with carrots and potatoes. I also made some dinner rolls from scratch, which worked out pretty well.  I have a bit left for my lunch today.  So, tonight I'll probably make pizza and finish off the green salad for dinner.

Due to life happening I wasn't able to make a grocery trip this weekend and we've been eating from our pantry/freezer in weird and creative ways.

Sa: last week's leftovers
Su: Fish tacos using gluten free fishsticks I found at the back of my freezer, and was able to use up some cabbage from the crisper.
M: Corndogs with a gluten free/pumpkin batter (not bad), sweet potatoes
T: Tostadas with leftover breakfast sausage/ diced mushroom mixture for the ground beef (kids barely noticed!), and a big ol pile of "Mexican" cole slaw (basically an oil lime dressing and cumin seasonings).
W: Home made chicken noodle soup
Th: Diced sweet potatoes in a tikka masala sauce over cauliflower rice
F: Pizza!

Sunday - one dish greek meatballs (found the recipe through a MMM poster, so first time trying)
Monday - hot dogs & crescent rolls (super gourmet around here, but my 12 year old will cook)
Tuesday - leftover meatballs
Wednesday - leftover dragon noodles
Thursday - tacos

This week's plan:
Breakfast- overnight oats for me, likely cereal or hot oatmeal for kiddo

Dinners - split pea and ham soup, chicken schnitzel with cabbage & some sort of potato dish, chicken with cauliflower and garbanzo masala (based off of budget bytes recipe) with rice, emergency meal - beef chili

Lunch- mainly left overs from dinner, although today is a random cheese sandwich and fruit

Snack - cuke salad with olives and crackers and cheese

Last Week - followed plan with the exception of Friday night as we were invited to dinner.  Saturday night my 6 year old had a friend over so I made them spaghetti with meatballs for dinner.  Sunday my spouse and I went out for some appetizers which was a nice change of pace. Lunches were left-overs and sandwiches.

Yes - we are having pizza twice this week. Older child had a good streak at school and his chosen reward was pizza for dinner in addition to or standing pizza and movie night on Fridays :)

It made meal planning easier this week!

~Tonight:  Ground venison in cheddar shell "tacos", with refried beans for DH. $3 for beans, cheese and sour cream.  Haven't figured out the price per pound of the venison.  Refried beans are canned, bought in a Sam's Club multi-pack last year.  Need to make a pot of Budget Bytes Not Refried Beans soon!

~Wed:  Crock Pot pork roast, side veggie.  $7 for at least 4 servings.
~Thurs:  Leftovers $0
~Fri:  Take out from?
~Sat:  Friend's BD party.  They're serving spaghetti.

Last week I ended up getting a cold, so many of the meals that I had planned did not get eaten.  We instead scavenged around for dinner most of the time or had meals with my other family members.
So this week's plan is almost the same as last week's:
Sunday- chili with cornbread
Monday- probably left over chili with cornbread
Tuesday - quiche and salad
Wednesday - more quiche and salad (my spouse made a bunch of quiche for the superbowl and we have 2 whole ones left over!)
Thursday - vegetable and chicken curry
Friday - leftovers

Other - i have a carton of tofu i should probably use up, so teriyaki tofu is the "emergency" meal.

Tuesday: Lunch- jar salad, left over taco bowl  Dinner- Indian butter chicken with garbanzos and cauliflower
Wednesday: Lunch- jar salad, left overs  Dinner- left overs
Thursday: Lunch- this will probably be eaten out due to work schedule, Dinner- chicken schnitzel with roast veg
Friday: Lunch- left overs, Dinner- left overs
Weekend: will probably bake rolls for sandwiches, egg & bacon burritos, whatever else I can scrounge up

Taco stuffed shells (meh, it was basically like baked ziti but more work because of filling the shells)
Butternut squash soup and grilled cheese
Honey lemon ginger glazed chicken
Chicken paprika and dumplings
Peach glazed pork tenderloin - there's approximately two pork recipes that I actually enjoy (as opposed to pork just being a substitute for chicken and just a background player) but this is one of them. So good.

Saturday DH made the steak for an early Valentine's Day dinner.  OMG it was so good!  He seared ribeye, then made a seasoned butter sauce which he used to frequently baste it.  And he served it with seasoned, grilled Portobello mushrooms.  Heaven!  Not sure of the cost.

Sun:  Blackened catfish on top of baby spinach with a side of leftovers.  Total cost approx $5
Mon:  Making this tonight: Coney Island Chili Dog Pie Cost approx $5.50 (Hot dogs were BOGO last month)
Tues: Rotisserie chicken as it's grocery night.  $7
Wed:  Out w/ the fam for my BD $0
Thurs:  Not sure yet.
Fri:  Out w/ Dad for my BD $0
Sat:  IDK yet
Sun:  Something easy as I'll be traveling.

We were having turkey zucchini meatballs for lunches (plus mashed potato. In a sandwich for the man). The kids requested veggie wraps this week, so that was easy. I bought them fruit jelly cups (not popular), a new type of chocolate milk (hated it), and popcorn (good) as a snack.last week I baked them banana muffins but it was too hot, plus we were away at the weekend, so I skipped the baking.

Friends, I have an almost empty fridge and I love it. All that food that needs to be eaten just stressed me out. I stopped stockpiling, unless I found a really good deal. I also reduced the variety of fruit and veg I bought. I quite like this new system. I was within budget and there is definitely less waste.

I am also looking for recommendations for easy and healthy grownup lunches, which are low carb, low fat, have no eggs, beans, lentils, chickpeas, peas, nuts, broccoli, cabbage and cauliflower. ( don't judge, I love them but can't digest them properly. Eating is such an ordeal these days). I am thinking of chicken soup. What else?

@Bee21 - I'd start looking for soup recipes that fit the bill, because that's a challenging set of requirements. Soup can be flexible, is typically inexpensive & healthy.

We again are having difficulties due to food allergies/avoidance.

Saturday - out for a birthday
Sunday - kebabs & rice
Monday - tacos
Tuesday - leftover kebabs & rice
Wednesday - leftover tacos
Thursday - eat remaining leftovers
Friday - boys are having their birthday parties, so it's going to be a fancy night of Digiornos pizza (their choice) + cupcakes

Tuna salad?  Not sure how low-fat you need, but this can be done with a citrus or vinegar-based dressing, and chopped up bell pepper, green onion and celery.  You could eat it over greens if you want more veg.

Also, depending on what you mean by low-carb, how about half a roasted acorn squash with cottage cheese?  I like cottage cheese with a baked sweet potato for lunch, but the squash would be lower in carbs.

@Bee21 - you can go on allrecipes.com and use the ingredient search to exclude certain foods.  That (hopefully) might give you a list of recipes that fit your requirements. 

We have sun for the next couple days, so excited to use the grill.  Also, the freezer is full again.  DH found some amazing meat mark downs in January and blew apart my goal of trying to empty the freezer.   

W - chicken breasts on grill (from freezer), carrots and onions, salad
Th - chicken (from freezer) taco salads
F - steaks (from freezer) on grill if it's warm enough with some kind of veg
Sa - veal shoulder (from freezer) in crockpot, veg
Su- Th - it's raining every day so taco soup, pot roast, bbq pork sandwiches, chicken parmesan or brats (all from freezer) with veg and/or salad

Thanks for the recommendation. I think I can manage a tuna or chicken salad, the sweet potato/squash with cottage cheese sounds great, and now I am curious what allrecipes comes up with.  The trick is, lunch has to be filling enough to keep me away from snacking, but most of the things I made these days just made me feel really unwell and miserable, so the food list is getting shorter. A soup and salad combo might work.Breakfast and dinner are relatively easy,  I can manage those, but lunch is still a work in progress.

Sunday I came home from my trip to a surprise prime rib.  DH did good!

Last night:  DH grilled blue cheese burgers and I made mashed cauliflower.  Cost approx $5 for 3 servings.
Tonight:  There is a venison roast in the slow cooker.  I'll serve it with a side veggie.  Slow Cooker Venison Pot Roast
Wed:  Cod, shrimp, okra $10
Thurs:  Leftovers $0
Fri:  Take out from?
Sat:  Gift card from Christmas while in the big city $0
Sun:  DH will grill/smoke something

tonight - spaghetti all'amatriciana (spaghetti with pancetta, tomatoes and onion) with parmesan cheese, puntarelle (a kind of Italian vegetable)

tomorrow night - pasta with mushrooms, salad

Thursday night - bean burritos (with sour cream, grated cheese and various veggies), steamed broccoli and carrots

Friday night - mushroom omelette with bread and salad


Saturday night - leftovers from my daughter's birthday party (we're holding it at lunchtime with 2 other families).  I plan to make cupcakes, quiche and potato salad (trying to use up a huge bag of free potatoes that we were given) nd other families are providing pizza, more cake and sandwiches so I imagine we'll have these as leftovers.

Last week was somewhat of a failure for me.  I ended up not making enough leftovers and I had to buy my lunch a few times.  Oh well.

This week is a strange week for eating, as I have family in town so I expect to be eating a lot of meals at my parents' house.  I made a really good ham, bean, and noodle stew last night for dinner (left overs anticipated to work for lunch today and tomorrow).  Planning on making a pot of potato soup on Thursday for dinner and Friday lunch.

I'm trying out jar salads for lunch this week.  First impression is that I need to have more greens than the mason jar has room for.  I might start putting all the toppings in a pint jar, and then bringing the greens in the serving container and dumping the rest on top when it's time to eat.

Dinner last night:  roasted herbed chicken thighs and butternut squash, kale/blueberry salad
Tonight: leftover coconut green curry and rice with added tofu and veg to round it out
Wednesday:  burger patties, mushroom gravy and asparagus
Thursday:  Brats, braised red cabbage and carrots
Friday:  Ham and split pea soup probably

Dinners were easy this week as work is crazy.
M. Spag bol (mushroom sooup for self)
T. Turkey meatloaf, peas and potatoes (made 2 meatloaves last Sunday. this was supposed to be lunches for next week but couldn't face crumbing chicken after a hellish day at work.)
W. Rice and bolognese sauce mixed with beans and lentils. ( my 7ys old was cooking 😏)
Th pressure cooker pot roast, carrots, sweet potato, rice.
F. Can't escape the crumbed chicken.
S. Sausages and salad
S. Chicken in peanut sauce etc

Just letting you know, that the celery index is high. Local supermarket is selling a bunch of celery for 6.90 (aussie) dollars. That's draught mixed with floods and a brewing cyclone, people. I bought 2 kg of chicken legs for 6$, so I guess it is more expensive to be vegetarian around here these days.

Here's what's on the menu this week. I'll be planning a few meals that we can all eat (food allergies) & then my husband will fill in with proteins on the nights he can't eat the main course.

Friday - chicken patty sandwiches + fruit smoothies
Saturday - turkey, stuffing, gravy (all from the freezer). Prep ahead slow cooker pork carnitas
Sunday - Asian cabbage stir fry.
Monday - turkey leftovers into "Thanksgiving leftovers in a crescent roll", which is an actual recipe & delish
Tuesday - Pork carnitas + rice/tortillas for those who can eat carbs
Wednesday - leftover Asian cabbage stir fry
Thursday - remaining leftovers
Friday - spaghetti & meatballs (zoodles/real noodles)
