@Bee21 - don't know how old your kids are, but when ours were younger & pickier (and, I still have one picky one at 10), we ate lots of pasta, with sauces/meat on the side. Plus, make your own tacos, quesadillas, naan pizzas, etc. They've always liked pasta & meatballs, tortellini, etc, so we default to that if they don't want what I'm making. At 10 & 11, if you don't want the meal I'm making, you can make something yourself (heat up leftovers, etc).
I also need to quickly plan ahead, as I'm out of town Sunday-Friday of next week, and need to make sure there are quick & easy freezer options for my husband & the kids.
Menu for the week (note: we cook bigger meals on weekends, and have leftovers during the work week):
All dinners are served with a salad
Monday - leftover chicken curry w/rice
Tuesday - leftover grilled chicken & potatoes
Wednesday - beef tacos (taco meat from freezer) + guacamole
Thursday - any remaining leftovers. Otherwise, spaghetti & meatballs (meatballs from freezer)
Friday - Chicken risotto
Saturday - haven't decided yet.
Sunday - I'm flying to Tokyo, so assume the kids & my husband will have pizza from the freezer
