Our meals for the week:
Sunday = Hamburgers and brats, baked beans, pasta salad, tomato & cucumber salad, mac & cheese, cole slaw, etc.. had the entire family over for a BBQ
Monday = Leftover brats and salad
Tuesday = Leftover hamburgers and salad
Wednesday = Breakfast (eggs, sausage and toast)
Thursday = Clean out the ref if anything is left or sandwiches and chips
Friday = Out to eat
Saturday = Home made pizza and salad
Sunday = Home made stir fry

Remembered to stop by and post my plan for this week:

Mon: Turkey burgers and grilled zucchini
Tues: Rajma
Wed: Pasta and tomato sauce
Thurs: Going to a friend's (backup of bean soup from the freezer, if we don't go)
Fri: Pizza
Sat: Leftovers

And I've messed up the week already - forgot my grocery list this morning, so I just tried to remember what was on it, and I missed a key ingredient for the burgers.  I can't just swap with tomorrow, since I haven't soaked the beans yet.  Boo.

Friday - Keto friendly pizza (adults) & pepperoni pizza (kids)
Saturday - Keto lasagna
Sunday - Hamburger patties in tomato/feta/cream "gravy" w/sauteed cabbage
Monday - leftover lasagna
Tuesday - leftover hamburger patties
Wednesday - any remaining leftovers. If not, spaghetti & meatballs (zoodles for adults0
Thursday - Oldest son & I are running a relay on the Oregon coast, so eating out ahead of that. Spouse 7 youngest child will likely eat out.

I normally cook on weekends, and we have leftovers during the week. But, I was out of town all weekend, so things are a bit more hectic this week:

Sunday - frozen lasagna
Monday - egg roll in a bowl
Tuesday - leftover lasagna
Wednesday - leftover egg roll in a bowl
Thursday - tacos
Friday - keto pizza for adults + homemade pizza for kids
Saturday - date night, taco quesadillas for kids

Bachelorette week again!

Last night I ended up cooking a quick meal because DH was busy catching up on chores before he left again this morning.  I topped Birdseye penne "pasta" (coupon) with shrimp (paper coupon) and scallops (e-coupon).  SO good.

Because he's out of town, I'll have different prepared Atkins meals.  They were on sale at approx $3.49 each.  I'll supplement with spaghetti squash "noodles" for extra nutrition.

Friday we'll have deer steak from DH's harvest last year with a veggie.

These might move around a bit, as my MIL wants to come over one night, not sure which night, and I don't know if she will eat at our house or want to take us out.  She is gluten-free, so if she is eating with us, I'll have to make sure we have a gluten free meal that night (Spanish Rice+Beans or White Bean Soup w/o bread).

Whoops! I fell off the wagon posting here (had a baby) but I'm back at it.
This week:
1. Tofu & vegetable curry stir fry with rice noodles (had for dinner last night, will eat for lunch today)
2. Tomato and cucumber salad (had for lunch yesterday, and will have for lunch/snack remainder of week, too)
3. Indian chicken with cauliflower and rice or cauliflower rice (dinner tonight, lunch tomorrow)
3. Cheddar polenta with mushrooms & eggplant (dinner)
4.  Southwestern salad (lunch, made with a kit)
5. Emergency meal: Spaghetti with meatballs

Not planning as formally this week since I'm off work.  So far we've had:
Sunday:  Smoked chicken, fish-sauce roasted broccoli (better than it sounds!) and slices of a beautiful orange beefsteak tomato
Monday:  keto gumbo and collard greens
Tuesday: Vegetable lamb-sagna
Wednesday - cold snacks:  tonno, steamed beets, potatoes and tomato and cucumber slices, olives, cheese and salami
Thursday - probably something with the half pig we just bought, steamed carrots and a kale-based salad.  Maybe French onion smothered pork chops.
Friday - Graze on leftovers

Thanks for asking @MaybeBabyMustache!  It is really good!  The recipe I use has you blend half of the cauliflower, and then add a mayo/sour cream/ranch mixture so it's extra creamy.  I printed the recipe long ago, so I am unable to find the exact match online.  But if you Google, dozens of recipes pop up.  Let us know if you make it!

The temps have dropped almost 30 degrees over the last few days and it's raining now, so I have soups on my mind.

Sunday:  Chili and keto cornbread (I'm thinking maybe a salad or slaw too, but that means putting on pants and going to the store)
Monday:  Grilled salmon, Thai basil tomato soup, sauteed kale
Tuesday:  Grilled porkchops and potato-leek soup
Wednesday: Lamb liver and onions over cauli-rice
Thursday:  Brats, carrots and roasted cabbage
Friday: Leftovers/random grazing

I'm going to be away from home Wed-Sun, so I made sure to have freezer food on the menu for most of those days for DH.  Not that he couldn't cook something for himself, but this way I know there won't be veggies going bad or anything being wasted, and he won't have to think too hard when he gets home late.

I'm traveling for work this week, so left a rough list of dinner options vs a formal menu this week. We use a large wipe board to list out kids activities & dinner menus. I'd left it blank, but my very organized 12 year old insisted that I fill out the daily menu section. ;-)

Monday - spaghetti & meatballs
Tuesday - grilled chicken & rice (leftovers)
Wednesday - tacos
Thursday - leftover chicken & rice
Friday - I'll be home. I haven't decided yet what I'm making, but I'm leaning towards some sort of a curry. I've tried a few keto friendly versions without success, so will need to continue to experiment
Saturday - keto chicken parmesan
Sunday - having guests, with a lot of food issues. We'll have a pasta bar for the kids (pasta with toppings they can self select, including homemade pesto) & homemade bread. My husband will grill salmon for the adults, and we'll have that with peach mozzarella basil salad

While I'm traveling, hoping to stay on my healthier eating plan & stay on track. Traveling always throw me off. Hoping to change that.

Haven't posted in a while but this is a funny week for us food wise so I thought I'd throw it out there.

We've been eating very low-meat recently but I'm trying to clean out the freezer this week so the menu is animal product heavy!

Sun: Pesto Lasagna (making lasagna noodles is a surefire way to get my kids to engage in the kitchen)
Monday: Beef and mushroom tacos (the last of our ground beef from the freezer)
Tuesday: Cassoulet (the last of our local sausage from the freezer)
Wednesday: Fish Tacos (bye bye fish sticks!)
Thursday: Hooligan pancakes w/ fruit and yogurt
Friday: Pizza!

Last night DH smoked ribs.  Nom, nom, nom.  We had Birdseye "pasta", and chocolate cherry sprinkle tomatoes from DH's garden drizzled with mozz, olive oil and basil on the side.

So many nice meals!!!

We are boring, eating the last of my freezer meals. I am on a health kick, so some evenings I have an alternative meal

M. Leftover Sunday roast and veg
T. Pasta (sauce from the freezer)
W. Cottage pie from the freezer/pan fried  fish for self
T. Sausages and corn/yogurt for self
F. Buttermilk chicken in parmesan crumbs (can't wait for this)
S. Eating out (bday party)
Sun. Grilled Salmon(they will complain)

Haven't planned next week yet, but I have some burgers, chicken tenders and legs in the freezer, plus some mince, so the kid will have her bolognese as well. We won't starve.

Just got back from a short trip so planning to eat what's in the house before making a grocery trip slog on Sunday:

Thurs: Lemon garlic tofu bowls with rice and asparagus
Friday: Roasted chickpea, veggie, and pesto flatbreads made on pitas
Saturday: Bean and rice burritos, with corn and cucumber salad

We have enough various oatmeals/cream of wheats to supply breakfasts, as well as salad and PB&J makings, so I think we can do it.

- Lentil dahl with crispy cauliflower
- popcorn shrimp with zucchini fries
- fish sticks with sweet potato fries
- bean burritos with calabacitas

My lunches this week are falafel pitas and yogurt with berries.

We've been doing pretty well not eating out! It's mainly choosing meals that are quick/easy to cook where I might also be able to prep a little here and there. This week:

Crockpot shredded chicken tacos, black beans with onions and peppers, rice
Chili Dogs, fruit salad, roasted potatoes
Kung Pao chicken, rice, cucumber salad (kung pao sauce from a jar, don't judge me lol)
BLT, chicken tortilla soup (leftover from shredded chicken tacos!)
Grilled wings and potato packets, baked beans
Spaghetti with sausage, salad (this will be Saturday when I have a little more time)

I really use my rice cooker multiple times a week!

I find that I always have way too many meals planned compared to what is actually eaten.  We will inevitably have dinner at a relative's house, or something will come up that a dinner isn't needed.  As a result, my pantry and freezer are overflowing!  This week is all about eating it up!

Meal 1: air fried popcorn shrimp (i didn't get to it last week), mac and cheese using leftover pasta
Meal 2: corn and cheese quesadillas (possibly with shrimp too) with zucchini, possible rice pudding
Meal 3: fish cakes and tater tots
Meal 4: lentil dal with rice

Last night DH smoked country style ribs from this year's half pig we bought from our neighbor.  We served it with cauliflower puree and leftover sauteed broccoli, baby spinach and asparagus.

Tonight:  Cod, tempura shrimp (BOGO) and garden fresh crookneck squash
Tues:  Crock Pot pork roast (also from the neighbor's) with homemade apricot jam from DH's co-worker, and fried turnips
Wed:  Chicken and crookneck squash stir fry
Thurs-Sun:  Not sure yet.

Both freezers are once again overflowing.  Such a problem to have!

Tonight: Red chile gumbo-ish, keto “corn” muffins, collards w/bacon
Sunday: Braised lamb shanks, parsnip/leek gratin
Monday: Stuffed eggplant, kale salad
Tuesday: Chicken thighs, roasted cauliflower, fried green tomatoes
Wednesday: Pork stroganoff, brussels sprouts
Thursday: Salmon, roasted butternut squash and broccoli
Friday: leftovers

Horsepoor, thank you for this!  I looked up a recipe and plan to make them now that it is cool enough to operate the oven.  :D

This is the recipe I use: https://www.gnom-gnom.com/keto-cornbread/  The first time I subbed some coconut flour for the whey protein, and it sucked up all the moisture in the dough, so I had to add almond milk.  They tasted good, but rose and then sank and got dense as they cooled.  This time I used some egg white protein, and subbed cream cheese and almond milk for the sour cream, and it came out brilliantly and stayed risen.

I find that I always have way too many meals planned compared to what is actually eaten.  We will inevitably have dinner at a relative's house, or something will come up that a dinner isn't needed.  As a result, my pantry and freezer are overflowing!  This week is all about eating it up!

Meal 1: air fried popcorn shrimp (i didn't get to it last week), mac and cheese using leftover pasta
Meal 2: corn and cheese quesadillas (possibly with shrimp too) with zucchini, possible rice pudding
Meal 3: fish cakes and tater tots
Meal 4: lentil dal with rice
Last night's shrimp and mac (I added frozen broccoli florets, too) was really good!  On track for quesadillas tonight.

I've started using the oven now that it has cooled off outside.  It was 43 degrees on the way to work this AM.

Last night DH smoked ham slices from the 1/2 pig we bought last month.  SO good.  He put slices of it on top of the pepperoni Fathead pizza I made.

~Tonight:  Deer and pork sausage meatloaf in the Crock Pot.  I'll serve it with turnip fries.
~Tues:  Chicken and "dumplings" freezer leftovers from this summer and a side veggie
~Wed:  Salmon, shrimp, fried okra
~Thurs:  Volunteering as a food judge
~Fri:  Take out from?
~Sat:  Gift card from last Christmas
~Sun:  Grill/smoke something

This is going to be an odd week since I'm going to concerts Wednesday and Friday night, and will be at a work function dinner Thursday night.

Tonight: Salad and leftover enchiladas
Tuesday: Shishito peppers, artichokes and grilled salmon
Wednesday night: Probably salad, and maybe grab a slice on the way to concert
Thursday: Work function dinner
Friday: Probably some quick scrambled eggs or something

Thursday baked chicken corn on cob mash potato , gravy ,fruit salad (honeydew peaches bananas is what we have)
Friday creamed chicken over rice , coleslaw, bananas
Ha ha laziest meal plan week ever
I’ve been getting over being sick so I’m tired

Mon =  Split pea soup with ham, bread
Tues =  Hamburger with cut up vegs
Wed = Chicken, roast potato, carrots, onions, green peppers
Thru = leftovers
Fri = Tuna salad sandwich, chips
Sat = Steak, salad, baked potato
