W- spag bol, salad
T.- steak and salad. Pumpkin soup. Coconut lime pudding
F. Chicken tinga (or sth in the slow cooker)
Sat- bday party
Sund- tbc, sth on the grill
We were having turkey zucchini meatballs for lunches (plus mashed potato. In a sandwich for the man). The kids requested veggie wraps this week, so that was easy. I bought them fruit jelly cups (not popular), a new type of chocolate milk (hated it), and popcorn (good) as a snack.last week I baked them banana muffins but it was too hot, plus we were away at the weekend, so I skipped the baking.
Friends, I have an almost empty fridge and I love it. All that food that needs to be eaten just stressed me out. I stopped stockpiling, unless I found a really good deal. I also reduced the variety of fruit and veg I bought. I quite like this new system. I was within budget and there is definitely less waste.
I am also looking for recommendations for easy and healthy grownup lunches, which are low carb, low fat, have no eggs, beans, lentils, chickpeas, peas, nuts, broccoli, cabbage and cauliflower. ( don't judge, I love them but can't digest them properly. Eating is such an ordeal these days). I am thinking of chicken soup. What else?
