Yesterday we had some left over rice from Sunday night dinner, so I made fried rice. A little bit of bacon cut into small pieces for flavour, a half a dozen eggs and a few peas. We fry the bacon, put aside, then fry the beaten eggs in a wok, throw in the reheated rice, bacon and frozen peas. Stir until it looks well mixed and the frozen peas are thawed. Serve with pepper and/or soy sauce. We made enough for 3 adults to eat too much for breakfast, and then lunches for 4 people extra.
Today, was back to a poached egg on homemade garlic flavoured bread, with sriracha hot sauce and some cheese grated over the top.
