the usual: oatmeal with coconut oil, tons of butter, pumpkin seeds, chia seeds, coconut flakes, raisins, whole milk, and a little brown sugar. I love oatmeal for breakfast, but if I don't add some serious fat to my morning oats I am hungry in an hour!

My co-workers are stunned that I "find time" to make breakfast like that. It's five minutes - eggs go in the pan, add spinach, blitz smoothie while eggs cook, flip omelette, pour smoothie, slide omelette onto plate. They spend longer waiting for someone to make them $7 worth of toast.

I actually had that thought myself after I posted it. :) I should have known someone here would appreciate the distinction.

Breakfast today was a bacon, scrambled egg and baby spinach wrap because the bread had gone mouldy and I couldn't have toast.

For the first time today, made oatmeal in my little CrockPot soup warmer.  It worked perfectly in about an hour with regular rolled oats (not quick cooking).  I can easily mix up the dry ingredients at home and then just dump in with liquid when I get to the office, then heat soup for lunch in the same appliance.

Pumpkin pancakes (they freeze well. pop in microwave for 30 sec. then toaster. taste like just made) and bacon

Some people mention the amount of dry ingredients made the batter too thick. So cautiously add your dry to wet. I used about 3/4 or 6/8 of the dry to wet. So delish. Enjoy!

Usually have porridge and blueberries but there was some of that designer yoghurt reduced for quick sale at the supermarket. Blueberry yoghurt with whole blueberries, sweetened with honey, hand churned or some such crap down from $8 for 900gm to $3. I would never pay $8 for it, but it's a lovely breakfast for $3! Got a few tubs. You've got at least 2 weeks after the best before on yoghurt, I find, a month or more on sour cream. I love reduced for quick sale.

Had peanut butter toast as usual today, but I'm getting low of bread and tonight my giveadamn is flat busted, so I'm not making more. Fortunately, I have both bananas and cottage cheese that need used up, so I'll have a banana sliced into cottage cheese with just a little honey tomorrow. This is a fabulous combination that almost makes me look forward to getting up early enough to be on campus by 0730. Almost.

I had pears and cottage cheese forced on me as a child and as a result I can't stand the idea, though I've not tried it in decades. But I can do the banana thing, buy cottage cheese just to make it possible, in fact.

Black beans, two homemade corn tortillas, bacon, and scrambled eggs with veggies, cheddar and homemade salsa. Lots of coffee with cream. I love weekend breakfast; we have it late morning, then no eating until dinner.

Same thing I eat every morning, because I'm an incredibly boring person. A piece of toast with some cheese, spinach, and three eggs with some coffee. Net cost approximately $0.75. Does it make me even more boring that I know how much my breakfast costs?

Today, coffee plus two pieces of whole wheat toast with peanut butter and a sprinkle of maple sugar.

Yesterday, coffee plus cranberry rice.  Don't know why I felt like eating rice for breakfast, but it hit the spot perfectly!  Savoury and salty (onion and spices) with a little sweetness from dried cranberries.  I love it when this particular caterer does an event at the church, because she always makes this and I always try to get some leftovers to stash in the freezer.

Today was Community Service Day and I knew my posse would be doing some hard labor on the landscaping at the library, while I tooled around checking on other nearby projects. I made my version of healthy waffles. A few scoops of Krusteaz pancake mix, with two heaping scoops of whole wheat flour, a couple of tablespoons of ground golden flax and a pinch of baking soda. I forgot to add an egg, but no big deal. Add enough cold water to get the consistency right and that's it. Top with real butter and real syrup, and you're good to go for hours.

I have three thrifted waffle irons, but the newest one seems to be The One, so the other two are going to go away at my very next opportunity.

Pancakes with maple syrup, fake nutella (the "healthy" kind made without palm oil), lemon and sugar, coffee and OJ.  This is our Sunday breakfast.  Other days are usually cereal or oatmeal before we rush out the door.
