Dinner Badassity
« on: August 28, 2015, 08:33:27 PM »
I keep seeing all these post on FB of meals made using premeasured ingredients delivered to you and you just follow the recipe.  Ugh, what a waste of money.  Tonight we had

Grilled KC strip steaks (free a gift from my in laws)
baked potatoes $1
Kale and apple salad $2  for all ingredients
Grilled squash (free gift from coworkers garden)
Fudge Popsicle $1 for a box of 8 still have 6 left

Way better than any restaurant meal and a total cost of < 4 bucks!

Love it - steak dinner for two for four bucks:) - food gifts are always appreciated, I trade goodies with my DIL, she's a great cook too and my son goes fishing and crabbing - blue crab is a delicacy:)
Co-workers of Mr. R. bring in garden bounty - Mr. R. takes in bags of avocados:)

My latest - pork loin from base (meat savings always 30%) $12 made 3 dinners for two plus 2 lunches for two. Used half a jar of peach chutney for the pork, a gift from a friend.
Served with seasonal corn on the cob and potatoes. Yum:)

Just put an 8/pound pork butt in crock.  88 cents a pound.  Will yield 20 servings for 7/bucks.

We do this a lot. Only two of us so we eat it for a week, but you can find new ways to use pulled pork if you get bored easily.

Home made cheesy garlic bread sandwich with home grown basil and tomatoes dipped in a creamy balsamic dressing. $1.00 a sammich and so damn good.

We love pork butt but the lowest I have seen around here is 1.49/ lb. still pretty cheap.  It freezes well too😀

I break from the herd here,  Dinner badassity is measured in deliciousness, not cost per serving.

That said, OP's dinner sounds great, and the cheap price is some tasty seasoning indeed.

It was absolutely delicious.  we stretched the Badassity over to this morning when we made steak, eggs and fried potatoes from the leftovers.  Also delicious.😃

Made Cafe Zupa's Chicken Enchilada chili tonight.  Doubled the recipe, fed 8 people and have 2 quarts of soup left over.  Super yummy and  way better than the restaurant-more chicken, beans, corn.  Facepunch me,  we ate at said restaurant earlier this week.  The $7 pricetag convinced me to find a copy cat recipe for it.

Up tonight is chicken shepherd's pie using left over crock pot mashed potatoes.  I love left overs.

We bought a pellet grill earlier in the summer, which makes smoking meat stupid-easy.  So now I watch out for cheap pork butts and smoke it up, then finish in the crockpot and freeze in small bags.  Instead of paying ~$17 a pound at the local bbq joint, I'm paying maybe $2/lb for the meat and the pellets.  Ribs come out great too, will have to try brisket if I ever find the meat for less than $8/lb.

I made beef wellington at the weekend. It was the best thing I have ever cooked.
but the price associated with it wasn't good. The following day I cooked a Turkey breast that I got via a raincheck at the local store. Still very good but very cheap and spread for another couple of meals.

If Badassity applied to cost then Beef Wellington is terrible. If it only applies to quality then Beef wellington is awesome.

Stretching my dollar on food so that I can occasionally cook beef wellington seems pretty badass to me.

Of course the best way to be a badass it to avoid eating out - there very little benefit gained. Cook at home - you can match the quality, control what foods you are eating and save money at the same time.  Then you can spend the money saved on alcohol!!!

That's a great idea for holidays coming up...when someone asks me what I want, I'll suggest food gifts. Yum.
