I have a ton of tomatoes in my garden and I have been trying to come up with creative ways of eating my bounty. My mother-in-law noticed that I am also growing basil and suggested a Caprese Salad. I didn't have fresh mozzarella, but I do have shredded from Costco for about 2.75/lb. The basil is free, the tomatoes are free. The biggest cost is mozzarella at about 15-20 cents a serving (1 oz). It also calls for a drizzle of extra virgin olive oil and balsalmic vinaigrette which might be 5-10 cents.
