Opinions on a saucepan

I broke the handle of my sauce pan and am looking for a new one.  Our pots & pans are either cast iron or Magnalite (a thick aluminum). I’m looking for a ‘buy it for life,’ no non-stick coating, reasonably priced.  I’d prefer something lighter than cast iron, so I’ll have no problem lifting it when I’m 80!

Carbon Steel pans cook differently from cast iron or even heavy multi-ply aluminum, but can be BIFL and meets your "lighter / no problem lifting when 80" and your no-non-stick*.  There's a reason why they dominate in professional kitchens

Not the cheapest option, but I love my Mauviel carbon skillet.  Amazon sells it for $75.  You need to care for it kinda like a cast iron (but easier).


*For the record I'm with you on no non-stick coatings.  I think we'll be look back and be amazed that we ever thought it a good idea to coat pans we cook with like we do now.

I have Cuisinart brand stainless steel pots, which seem to be holding up fine after 10 years or so.  They were fairly inexpensive on a black Friday special. I also have a giant Tramontina brand stock pot from Costco.

I received a 3 quart Tramontana saucepan for Christmas and I love it.  One advantage of it is that it works on an induction stove as well as traditional electric or gas.  I bought a single induction burner (that I also love) and needed a pan for it.

I have this and this. They're both fantastic for distributing heat, easy to clean, oven safe, and dishwasher safe. They're six years old now with no warping or damage to the finish, just a bit of cosmetic oil spatter on the bottom and sides after four years of gas stove service. I could get it off with Bar Keeper's Friend if I cared enough to.

I have 40+ year old Lagostina stainless pots that are still in great shape.  Mine have plastic covers on the handles, which I like.   They are often available at places like Winners in Canada, and TJ Maxx in the States for a really good price.

We gave DS and DIL All Clad pots and pans as gifts because that's what they wanted.   I don't like the handles on theirs - all metal, and awkward to use if you have arthritic hands like I do.   They are great pots and pans otherwise though.
