Am looking at simple ways to convert my desk to a sit/ stand desk, any ideas? Was thinking of just finding something to put on top or a some shelving etc from some where

A movable top desk would likely be easiest, and depending on the size of your current desk, could potentially be stored underneath when you sit. One of the simplest standing desks I've seen is this one:
I'm going to build one with some leftover wood pieces. For ergonomics, this calculator seemed helpful for the height:

I have one very similar to the one pictured above. Mine is further tricked out by virtue of me having a big L-shaped desk, so I put the "standing" part on one side and kept the regular "sitting" desk on the other side so I can switch back & forth. Both sets of monitor / keyboard / mouse are running off the same laptop.
My "standing" part is a Target shoe rack / bookshelf thingie that I simply set down on my desk. (I am lucky; with my height it was pretty good right out of the box. Although ergonomically long term I'm going to need something custom to reduce stress on my shoulder and wrist joints.)

I took my table style desk and built leg extensions. It was a little wobbly, so then I added 2x4s across to make a shelf half the depth of the desk and that made it pretty solid. If I were to do it again, I'd build two shelfs like that under there.
