Whatchya making for Thanksgiving?
« on: November 23, 2022, 06:24:42 PM »
I'm taking it easy this year, but excited to try the dry brined, mayo marinated turkey from NYT (paywall):

https://cooking.nytimes.com/recipes/1023623-mayo-roasted-thanksgiving-turkey-with-gravy?action=click&region=Our%20Best%20Thanksgiving%20Recipes&rank=1

I bought my cranberry sauce, brussel sprouts, and sweet potato casserole pre-prepped from local small businesses. My biscuits will be Southern Biscuit mix (you can't convince me that anything else is better!). And we're having chocolate chip and cranberry walnut cookies.

Happy Thanksgiving!

We have friends of family coming so need more than what Bro/sis in law provide.

I'm making a pork butt roast. Have it on v.low simmer with wine potatoes, onion, and spices.  will add baby carrots an hour before serving, else they are mush. serve over rice.  It is smelling really good.

Me and the parents. Possibly my neighbor if I figure out he's got nowhere to go.

Turkey
Mashed potatoes
Green beans with a light dressing and croutons
Cranberry sauce
Rolls and butter

Parents are providing dessert, I heard there was pie. I'm the entertainment in the form of a 8 week old kitten who weighs 1 lb 11 oz, at least until she gets tired and sleeps for 4 hours. Which happens regularly. She's little.

We're not bit turkey eaters.

Happy hour:
Pomegranate martinis/sparkling cider
Goat cheese crostini
Festive tunes

Dinner:
Steak
Roasted acorn squash
Sauteed green beans
Mashed potatoes
Fresh cranberry sauce

Dessert:
Pumpkin pie
Chocolate cake (two of us are not pie fans)

The tradition here is to buy your fully cooked turkey meal package from a 5-star hotel. Most of us here don't have ovens, or the ovens we have are countertop ovens that aren't large enough to hold a turkey.

Most expats here also don't have extended family with whom to share Thanksgiving dinner, so our solution?

We are getting together with several family friends and sharing the cost of a Turkey meal package. Everyone then brings an additional side dish or dessert to supplement the turkey meal. Since people come from different cultures and walks of life, the side dishes range from "traditional American Thanksgiving" to other culturally-interesting foods.

Here's the list for one of the Thanksgiving dinners that we will be attending:

Main Course
1. Turkey with stuffing and cranberry sauce
2. Butter chicken
3. Chicken adobo

Sides
1. Dinner rolls
2. Salad
3. Cherry casserole
4. Potato salad
5. Green bean casserole
6. Mashed potatoes
7. Mac & cheese
8. Sweet potato casserole
9. Bangers and mash
10. Cut veggies

Dessert
1. Pumpkin cake
2. Fruit
3. Pie

I have definitely made pork for Thanksgiving for family number 2. We used to do Thursday w/ one family and Friday w/ the other side and roasting two turkeys always felt insane, but we also didn't want to serve leftovers to the other family who would have been offended :) So Pork roast it was!

This year it’s just my son and I so we are going out to eat. This is an unusual thanksgiving and I am fine with it.

I am worried that the turkey brine as written in the recipe will be too salty. I didn't use a half cup of kosher salt.

I then undersalted a few of my side dishes, just in case (figured we can always add table salt). We'll see? Nice to try something new in either case.

Also, the herb mayo was a really cool shade of green, but it freaked my whole family out.

@Cassie a restaurant thanksgiving sounds wonderful! have fun! @Freedomin5 thanks for sharing your expat tradition!

I spent a year living in Italy when I was a youngin and all the Americans made their way to Rome to eat burgers at the Hard Rock Cafe for 4th of July. So fun to think about the adaptations of traditions.

Plans went sideways due to Covid so it was just dear daughter and I.
She requested salmon, I also made spaghetti squash soup and a blueberry/blackberry cobbler.
Caught the salmon, picked the berries, grew the squash. Thanks giving indeed.

Wow, @sonofsven - that is super impressive! We grew most of the herbs ourselves, picked a lemon of the tree for part of another dish, and used pomegranate seeds for another. But, you nailed it!

Sorry to hear plans went sideways but that meal sounds very cool and definitely in the spirit of the day!

I have never actually made a full traditional Turkey Day spread, but I often contribute wild rice as part of my cooking for parties.

People (even professional chefs, much to my shock) often do not understand how to cook wild rice correctly. They seem to think popping the kernals is a bad thing.

Too bad for them b/c it is DELICIOUS.

We gathered in a bunch of folks who would otherwise be alone, but it was still a fairly small group for us -- only 8 total. Since everyone was onboard to cook and bring something, we had all the usual stuff, plus some additional trimmings (including 4 pies for 8 people. I like pumpkin pie for breakfast, what can I say?).

Although the turkey and dressing were delicious, the winner was the white dinner rolls, which had been made with duck fat, since one of the diners is dairy-intolerant. Wow, those were fantastic!

Thanks, it was Wednesday afternoon when I found out our second (!) plans were cancelled, so I wasn't going to run around like a crazy person and buy the traditional Thanksgiving meal just because.
It was a nice day with my daughter, we went for a long walk, did some bird watching, and had a nice meal. Perfect, and very thankful.

Wow, a phone plan for fifteen bucks!
