Having a smoothie right now with spinach, blueberries, oatflakes, banana and apples for breakfast. For lunch I’m having whole-wheat bread with baba ganoush and snack tomatoes.
Made a vegan stew yesterday with seitan, carrots, onions, mustard, dark beer and other good stuff. Served this with stewed pears (is this Dutch?). Was really into the stewing for some reason. ;) There is plenty left so will be eating this today for dinner as well, served with some baked potatoes from the oven. Gotta get those carbs in. :)
Planning to eat this week for dinner:
- some steamed plantains with refried beans, tomatoes, avocado and rice
- sauerkraut mash with potatoes, pineapple and raisins with homemade applesauce.
- pasta with grilled vegetables, sundried tomatoes and olives
- red thai curry soup with chickpeas, roasted red bell peppers and spinach, witch baked bread and mango chutney
