A real dutch winter dish, mashed potatoes mixed with kale, veganized with vegan 'bacon' pieces and stir fried onions, garlic, red pepper and sweet soy sauce. Served with spicy mustard and pickles!

A mini bar of Green & Black's 70% cocoa chocolate. But only because I've eaten all the milk chocolate bars and am down to the dregs of the box. I'm very much not a Satisfied With One Small Square Of Really Good Dark Chocolate sort of person, I like quantity over quality.

cooked apples made with maple syrup, cinnamon and cornstarch. I had three apples that had gone soft.  I was going to throw them out, and decided to do this instead.  very good.

Today I had vegan lasagna for lunch (with tofu ricotta, mushrooms, onions, baby kale, and soy granules). Tofu and veggie Banh mi sandwich for dinner so yummy!

Butternut squash hash made with coconut oil, sage, black pepper,  and bunching onions.  Sauteed onions are better but they don't agree with me so I use bunching onions. 

Saute the squash then add the onions and sage.   Once every thing cooked crack a couple of eggs over it and let them cook.   For the non vegetarian option add cooked bacon at the end.  We make it both ways depending on what we have on hand.

Dinner last night: tacos with black beans, bell pepper, lime juice, spicy guacamole, and cilantro. Would have been vegan except I toasted the tortillas in a little bit of butter.

Breakfast: oatmeal with blackberries, slivered almonds, and cinnamon.

Made pasta fagioli last night, which was pretty yummy and a bit interesting due to the smoked paprika (SP). I'm not sure how I feel about SP. It tastes a little meaty to me. Strange. The recipe also called for nutritional yeast, which was a great addition and made the soup taste a bit cheesy. Good experiment.

I wish there was a community spice exchange near me. It would be great if you could buy a bottle of spices, take the amount you think you'll use and then leave the rest for other people to try. That way, spices would get used up instead of just sitting in the cabinet.

Breakfast: whole wheat vegan pancakes with peanut butter.
Lunch: Fried pot stickers. Vegan (I think, definitely vegetarian but I didn't read the ingredients) but not exactly healthy.
Dinner: Tofu, asparagus, and bell pepper stir fry, served over brown rice.

I’ve had a delicious green smoothie every morning this week.

- heaping spoonful of plain yogurt
- banana
- frozen pineapple, mango, and peach chunks (from TJs - probably about $2/bag which lasts 4-5 smoothies)
- several cups of kale (don’t pay a premium for the baby leaves that are easier to eat if it’s going in the blender anyway)
- scoop of protein powder (optional)
- enough coconut beverage (half gallon for $1.99 at TJs) to get it the desired consistency

$13 of ingredients makes at least 10 large smoothies - not the cheapest way to eat breakfast, but I love starting the day having already knocked out my recommended fruits and veg for the day.

If I have carrots in the fridge I’m not going to use in time, sometimes I shred them up and throw them in the blender too. Can’t even taste them.

Also, this is one of my favorite recipes ever. Cook the tofu longer than directed to make it nice and crispy/chewy. I have to double the recipe or else my husband and I eat the entire batch in one afternoon.

I made this balsamic lentil salad for dinner yesterday, and finished it off today:

The flavor was really good but the texture of the lentils was kinda dry and grainy. It didn't say what kind of lentils to use or how to cook them so I just boiled some brown lentils until they were soft. Lentil aficionados, any suggestions for how to get lentils with a better texture for salad? (different type and/or cooking technique?) I typically only eat lentils in soup.

I make a version of these and add some oats as well as jalapenos (to give it a kick). Goes great in a wrap with some salsa and some greens.

I had a light lunch of a couple of large poppadoms (sp?) broken up into smallish bits and nuked in the microwave until cooked, and then dipped the poppodom pieces in some plain yoghurt. Yum! (and satisfied my craving for salty chips)

Using the full-flavored version, except I left out the rice vinegar because in my opinion it turns out too sour and then you need more honey, when I'm trying to limit sugars.

Dumped it on top of some crispy fried tofu and sauteed onions and bell peppers, with a little brown rice. Simple and tasty!

@nessness Thanks for the recipe link! I've been looking for spring/summer meals. In the comments, the blogger said she used green lentils. I'm a newb to cooking, but I've had good luck making lentils in the Instant Pot.

@nessness - for salads do try Puy lentils, which are what this recipe calls for, and which are sturdier than brown or red lentils.

Instead of pre-cooking the quesadillas, I just keep the interior mix in a big bowl, and make a quick hot and crispy quesadilla on the stove whenever I get hungry.  I also add chopped chipotle in adobo, and use the trader joe's roasted frozen corn, which is smoky and delicious.

Califlower,carrot, potato,, pea curry over rice, naan on side. I tried to not make it too spicey fir kids, but a little too bland. It would have been excellent to add chick peas to make more filling.

spaghetti and (fake) meatballs for me, regular meatballs for kids. Would not recommend the meatballs. Next time will just add a bunch of sauteed mushrooms, onions, and black olives to my part of the sauce.

I just made a chick pea flour and coarsely ground oat flour omelette.  Roughly based on this recipe.
