Went to a party yesterday, and someone made hummus with shredded chicken in it.  I really liked it!  It was sort of a cross between spicy chicken dip and hummus.

Recipe:

hard boiled egg (cut up)
1 can of tuna (drained)
1/4 red onion
1/4 jalapenos
1 hefty spoon of sour cream
salt,pepper, and hot sauce to taste. ( I like it with a lot of hot sauce)

Its super handy to have a mix, especially one that costs pennies to make! I searched for years for a great homemade mix and finally found it! I sub white flour for some or all of the whole wheat. Depends on my mood :-)

Grated apples into it today. I keep it in an ice cream pail or a very large pickle jar from Costco.

Applesauce from apples I picked on our property (organic by virtue of no maintenance! Also, a heritage tree that is the only living specimen of a huge nursery that was here over 100 years ago), and some organic apples I got on the grocery store 'ugly shelf'- 4.5lbs for 99 cents!

I made the most amazing enchilada bake yesterday.

Whole grain tortillas to cover the bottom of a 9x13 pan, then a filling of 2 sliced avocadoes, 1 drained can of black beans, 1 drained can green chilies, 2 c frozen corn, and seasoned with 1/4 c chopped cilantro, 2 T lime juice, 1 t lime zest, 2 cloves minced garlic, and about 1/2 t each of cumin, chili powder and salt, and about 1/4 t smoked paprika.  Covered the filling with another layer of whole grain tortillas, then poured a jar of salsa verde over top and baked for 35 minutes at 400F.  Served with a tiny bit of sour cream.

So good and quick and easy.  Very flavourful too.

It's super good!  I'm not veg, but this is a really satisfying meal.  The hints of smoked paprika give a bit of a bacon-y-smokey flavour that really melds well with the dish.

Beef stew.  I've been eating chicken daily for just about 2 weeks, the beef is so good!

I tossed in a bunch of things, potatoes, onions, red peppers, tomatoes, red wine.  Mmm!

The weather isn't cooling off here quite as quickly as I had hoped (I am an autumn-lover), but the forecast is calling for a change in that soon, so I am in full-on soup mode. Lunch today is homemade creamy corn and potato chowder. When I get home this evening, I'll be making tomato soup from the last of our tomatoes, and probably some kind of whole wheat loaf to accompany it!

I found this amazing double pot in a local antique shop for R70 ($5-ish). You can see the bottom half here but you can put the top half on and use it as a bain-marie for things like melting chocolate. It's top quality stuff. Made poached tarragon chicken and leek, and stir fry veg.

Lasagna for dinner. I grew up in a ricotta household but bechamel just totally blows it out of the water. That plus my killer tomato sauce should more than compensate for the uninspiring mouthfeel and flavor of the gluten free lasagne.

To drink I've got a Manhattan. It is a weekend after all...

Canadian Thanksgiving here. Had pot roast with vegetables. Used tomato and red pepper pasta sauce from the freezer to substitute for canned tomatoes.

Made garlic mashed potatoes. I usually don't cook the potatoes quite long enough and overroast the garlic, but not today.

It was all heavenly. Enough leftovers for another day or two.

Also made oatmeal cookies this afternoon. My oven tends to overcook, but I have finally learned to set the temperature a little low and cook a little on the short side. Fixing the oven thermostat is on my to-do list, though not very high up.

Everything came from supplies in the pantry and freezer. Just bought some butter for the cookies and mashed potatoes..

You could try skipping the gluten free lasagna sheets and using polenta:

As for the ricotta vs bechamel argument, yeah you should definitely use bechamel for the white sauce; however ricotta has a place alongside bechamel especially in a spinach lasagna or something. I made a quite delightful and colourful beetroot + ricotta spaghetti the other day.

You will not regret your decision :-)  Most people eat them with onions fried in butter.  I like them with spinach fried in (fake) butter as well, and sour cream on top back when I could eat milk products.

It doesn't hurt to add a wee bit of diced bacon or smoky ham to those frying onions, either!

I'm eating stewed plums from the tree in my backyard. Damn, they're good. And surprisingly filling.

Today I ate up my tomato harvest.  That sounds impressive, but I only had one plant that started itself late, so I had one large handful of tomatoes.  I pureed them and tossed them in a hungarian beef stew served over egg noodles.  I had seconds.

Leftover chili with cheese, avocado and tomato on corn tortillas my dad left here when he was visiting.  Was going to feed them to the chickens but they were still good!

Contemplating making some eggdrop soup with some homemade beef broth that needs to be used, but really need to go workout first.

What could loosely be described as a salad.

Sliced cucumber, iceberg lettuce, cubed cheese and shredded chicken in a plastic container. No dressing. Can be grazed on one-handed while working. Just the way I like it.

I'm in the midst of shoving an amazing dinner into my face.  The last two chops from the 4-H lamb we bought last year, cooked in a cast iron grill pan and finished with a carrot top and garlic scape pesto I made from garden "waste."  On the side a small baked acorn squash from the garden brushed with olive oil and topped with a little cinnamon and maple syrup, and then sauteed onions and spinach creamed with a little parmigiano reggiano and sour cream.  Bota Box Redvolution to wash it down.

I just had a awesome meal of stinky tofu and chicken feet.
Both things that I would never have have never thought about eating a few years ago but have become common place for me.
