Roasted chicken rubbed in Pinchitos spices, artichokes with homemade garlic pesto mayo, and a beet/broccoli slaw with Asian dressing.  Washed down with a homebrew stout.

Bring on the local produce and catch!  Last night we feasted on baby lettuces and radishes with baked sheepshead (the fish that is) and homemade focacia.  I drank a glass of boxed Trader Joe wine with the meal while my husband enjoyed a homebrew. Homemade strawberry scones for breakfast.

In honor of strawberry season and mint juleps at the Derby, I am making a strawberry salsa using a recipe that requires:

 2 cups sliced fresh strawberries

2 tablespoons chopped fresh mint

2 tablespoons white sugar

1 serrano chile, seeded and minced

1/3 cup minced red onion

2 tablespoons raspberry vinegar

salt and pepper to taste


Strawberries are from a local farm. The mint came from my sister-in-law, volunteer plants that are doing well in a shaded area of our lawn.  No red onion in the house but I have some scallions from this week's CSA box that I will substitute as well as red wine vinegar for the raspberry vinegar which I certainly don't keep on hand.

The recipe says to chop the strawberries, add mint and sugar, then let that sit in the fridge for an hour.  Add other stuff.

I'm cooking chickpeas right now, and making a huge batch of hummus tonight.  I think I'm going to split it, and make some garlic, some olive, and some sundried tomato, or mix in the artichoke bruschetta stuff I have.  Anyone know if hummus will freeze OK?

So for dinner, I'm just going to have that with some chips and raw veggies and olives or whatever else I can scrounge up.

Anyone know if hummus will freeze OK?

Put the hummus in airtight containers with some room at the top and use a thin layer of oil over the surface so it doesn't get too dry.

I'm going to eat some hot, heavily seasoned veggies and rice with hummus on top!

I had a failed attempt at coconut milk (from desiccated coconut) staring at me in my fridge, so I decided to do something with it. It didn't turn out milky enough to use for baking or curries, so I decided to use it as a base for tea. Boiled it with some star anise (which I also need to find more creative applications for--unfamiliar!), sugar, and black tea bags. It's something like Thai tea, but not quite. Also I used too much star anise, so it's more in the line of licorice tea. I'm not displeased.

The strawberry salsa was a hit!  In addition to adding a hot pepper, I added a bit of sweet pepper too.

It is early CSA season here (lots of greens) so I ate some salsa as a salad topping, some with tortilla chips before dinner.  We had grilled turkey burgers last night with onions and peppers on homemade buns (Julia Child recipe).  We also used the salsa as a condiment for our burgers.  It is light and fresh--nice taste of spring.

I'll make it again.

CSA beets were getting old, so I made a pureed beet, carrot, ginger, garlic soup. I threw in the beet greens as well that were about to be thrown away (this part was off-recipe).

It turned out yummy! It was a lovely red color.

I had only eaten beets raw before so I was a little scared how it would turn out. A big batch went into the freezer for future consumption. :-)

I had a panino with mortadella, marinated grilled peppers, and tomato. It was enormous, but in the end I prevailed. Now I can say I accomplished something today.

went to costco the other day and bought spinach for dayssss. spinach indian stuff for dinner yesterday, spinach frittata for breakfast today, and penne w/ spinach & gorgonzola cream sauce tonight

I had my first home-cooked breakfast in weeks this morning - jalapeno bagel bacon, egg, and cheese sandwich. And right now I'm eating stir fry with rice.

Has been non-stop go go go for us the last week, had evening meetings literally every night this week.

Finally got a night at home and made preserved lemon cajik, greek-ish style salad, lemon rosemary roasted baby potatoes and lamb kabobs on the BBQ.

Also made a cocktail with Ginger liquor and slo gin with soda...so so good!

Too busy cooking and eating lately to post! Last night I had guests over for baked falafel, baba ganoush, tzaztiki, pita bread, sliced cucumbers and tomatoes, cabbage pirozhki, and alcohol. Lovely!

Dinner was a delicious meatloaf found on all recipes.com, fried rice found on http://www.mennonitegirlscancook.ca and sweet potato baked in rounds in the oven. It was delicious!

I am eating spaghetti marinara- except the sauce includes so many tomatoes, onions, carrots, celery, zucchini, bell peppers, and olives that the noodles are actually sparse. More expensive this way but so so satisfying.

Kohlrabi Risotto, recipe from the NYT:

This was the solution to the question brought about by last week's CSA box:  What to do with the kohlrabi? 

Risotto is one of those wonderfully economical ways to use up bits and pieces.  Granted, it takes a bit of patience.

And Grant--my son leaves for the UK on Saturday.  He is bringing his girlfriend's family a bottle of maple syrup.  We had to think for a bit about an appropriate hostess gift.  Preferring consumables to stuff, we decided to go with something that is enjoyed but pricey on the other side of the pond.

I hope you are having a wonderful time in London.  (Being a groundling at the Globe is one of our favorite things to do there.)

Right now I'm eating a satsuma. But I'm cooking a hot chicken and lentil curry and brown rice to eat tonight and across this week.

I had my first cold-brew iced coffee in three and a half weeks this morning. That was nice.

After eating breakfast and lunch out of a cooler, and dinner out at mediocre restaurants, I'm happy to be home enjoying two sunnyside  up homegrown eggs over a hash of bacon, mushrooms, onions, red bell pepper and asparagus. When I got home last night we made huge salads with homegrown lettuce.  Hurrah for real, fresh food. 

I think tonight I'm going to give NW Edible's beef curry slaw/larb a shot, since I've had a red cabbage languishing in the fridge for a couple weeks now, and plenty of ground beef in the freezer.
