I'm currently (over)eating the last of my slow cooker shredded Mexican chicken, my last batch of Spanish rice, and a portion of refried beans I thawed out in freshly made tortillas. Fortunately, I have more beans in the freezer--so freaking delicious.

I think I'll convince myself to stop eating now so I can wrap up the rest of this in tortillas for tomorrow's lunch. ...or maybe just one more? ;-D

My girlfriend has made some outta-this-world gluten free almond biscotti. It's another planet of deliciousness. You'd all love them, too, 'cause most of the ingredients came from Costco.

A smoothie made of:
An organic raw apple,
lime (from yard tree),
mint (from garden),
and (yesterday's leftover) green tea.

Only took about 3 minutes too -- mainly to chop the apples.

She says she used this recipe and just substituted a GF flour for the normal flour: http://www.saveur.com/article/Recipes/Toasted-Almond-Biscotti She used Namaste Ancient Grains GF flour. (Costco is a bit weird with respect to these flours. They seem to have a different one each time. But it's a very good place to get that sort of stuff, because normally it is outrageously expensive.)

I swear we are not normally this crunchy.

p.s: "another tip is that the first step basically calls for you to make almond paste

it stays very grainy, because most people's food processors can't make it that smooth

pre-dinner dessert: chocolate espresso pudding with fresh whipped cream
actual dinner: spinach & gorgonzola stuffed chicken with roasted asparagus and red onion
also a couple croissants 'cause still hungry

My husband made homemade donut holes last night (apparently it is a big thing in Portugal...) he added lemon zest (yummy) so I am having one with my tea :) ... Course told him he can't make them anymore as I need to watch what I eat these days ... (he is MUCH too excited to see the "big baby belly" coming in a few months lol... ;)

Fruit bread from my free bread machine (mom gave me hers that she didn't want). Take any white bread recipe and add 1/4 cup mixed peel and 8 chopped glacé cherries (both in bulk at grocery store).  Delish!

Thanks Worsted Skiens! I'm super excited, going to be opening a gallery show called "Syria - Art, Architecture and the Human Experience" which is an exhibition of my travel photography from Syria and photography from a Canadian doctor and paramedic who have been working in the refugee camps in Turkey as well as inside Syria.  Feels great to be putting all my random skills and interests towards such an awesome cause!

fun story, don't put a cup of alcohol into anything you want to freeze ever. ended up putting the ice cream maker in the freezer while it was churning since the bowl got too warm to make any more progress, and it barely solidified after churning for an extra hour. It worked though, and this ice cream is soooo good! maybe a little boozy, but I expect that goes away if you eat enough of it ;-)

In honor of St Patrick I simmered a hunk of corned beef (on sale, $1.97 per pound) until it was nice and tender. No cabbage or potatoes, though. Instead I cooked a side of mixed fresh and frozen veggies.

I love substituting things for milk, butter, and eggs because they're kind of precious in my house (rarely buy milk, butter's flippin' expensive in Korea, and I only get 6 organic eggs a week now). A recent discovery is using applesauce I make from apple cores and peels. I feel like a badass using all but the seeds, stems, and really terrible core bits.

As for me: I just ate two of my fancy eggs on top of homemade rosemary bread with mayo and colby cheese (another special item here!). And coffee. Let's not forget the coffee.

This has become a standby breakfast for me now. It's so fatty and filling and really gives me the energy I need to make it through Mondays (my longest work days).

tried mac & cheese with ricotta for half the cheese. smooth texture but pretty flavorless. 6/10, edible but getting rid of the whole pan is gonna take a while.

While the weather here remains cool, we have had sufficient warmth and sun for one of the local farms to offer a variety of greens and leeks.  Dinner last night was a leek tart served with baby lettuce.  The night before, I melted some anchovies (the secret ingredient) in olive oil with garlic, added baby kale, served over pasta with grated parmesan. Leftovers became lunch.  We are snacking on blueberry muffins made with blueberries picked last summer. Every time I think I have used up the frozen berries I find another bag.
