My girlfriend has made some outta-this-world gluten free almond biscotti. It's another planet of deliciousness. You'd all love them, too, 'cause most of the ingredients came from Costco.
hook me up with a recipe? I have gluten-free friends with a costco membership coming to visit from Ohio next weekend so this is, like, perfect.
She says she used this recipe and just substituted a GF flour for the normal flour:
http://www.saveur.com/article/Recipes/Toasted-Almond-Biscotti She used Namaste Ancient Grains GF flour. (Costco is a bit weird with respect to these flours. They seem to have a different one each time. But it's a very good place to get that sort of stuff, because normally it is outrageously expensive.)
I swear we are not normally this crunchy.
Namaste, Russ.
p.s: "another tip is that the first step basically calls for you to make almond paste
by blending almonds and sugar
it stays very grainy, because most people's food processors can't make it that smooth
so i didn't worry about that, and i also added a tiny bit of water as it was blending to help it come together
I also used almond extract instead of vanilla extract
to make it more almond-y"
