Fig/matcha/ginger/whey protein smoothie.
In the slow cooker, simmering away as I type:5 chicken thigh cutlets (fried), 2 tbsps mild curry paste (fried), 3 peeled chopped sweet potatoes, can of coconut cream, 2 cups chicken stock, 1/2 cup of desiccated coconut, 1/4 cup fish sauce, 3 tbsps brown sugar - cooked on high for 2.5 hours. Turned down to low for a further 2 hrs.I'll throw in some mushrooms and coriander close to serving time, and will serve with rice. (When I see the beef on special, this one is next: Beef Rendang.)
Diced chicken thighs or do you cook them whole then shred?
