I made this up and must share.
Zesty Southwest Black Bean Quiche.
Crust is pretty much pie crust, but 1/3 of the flour is replaced with cornmeal.
Filling is 8 eggs, half of cup almond milk, a can of black beans, a can of rotel, Mexican spices (chili powder, cumin, oregano, cayenne, paprika, onion powder, garlic powder, red pepper flakes, pepper, salt), bell peppers diced small, other veggies if you want, maybe corn would be good.
Can be topped with shrimp, sausage, or bacon.
I suppose you can add cheese, I did not as I'm allergic.
**above recipe is enough for 2 pies or 1 9x13 inch pan
OMG so good! I've made it twice, it was definitely not a fluke. First time was to a work function, I was sad that it all got eaten and I had no leftovers.
