For breakfast, homemade egg, cheese and chicken sausage "biscuit" on english muffin. Today after a little sledding kids had lentil soup and I had lima beans with yellow rice (yes from the box but it was good!). Because of the holidays, actually TOO much food around. I'll have things planned to eat, and then people will bring more food in, which will need to get eaten and the planned menu delayed, or thrown out. I've had to throw food out these last couple weeks : (

Made really good marinate Chicken breasts for big Sandwiches, Veggie Medley with Melted cheese and a peppercorn pasta salad.

What I ended up having to throw out was a couple plates of food from a dinner, someone brought to me; one "hot" food that contained chicken, one a plate of cold stuff, salad. I already had a lot of leftovers from a dinner I made.  I suppose I could have frozen the chicken plate, but I have gotten sick real badly off of chicken before so I'm just leery of eating non fresh chicken.

Leftover rice and beans topped with pulled pork left over from a different meal and drizzled with sriracha sauce. Side of raw spinach.

Homemade granola with oats (duh), walnuts, dates, cocoa powder, chocolate nibs, and a pile of spices. Yummy.

Same breakfast every day, eggs in a basket with homemade bread.

Last night I tried to make battered shrimp.  They tasted very good, but the batter did NOT adhere.  I'll have to work on that recipe a bit.

Oh yay - I just made Okonomiyaki for the first time and it was delish. Pork + cabbage combo is kind of hard not to like.

Made my first roasted pork loin (garlic-rosemary). Bought a inexpensive, fancy meat thermometer. Delish. Served with mashed sweet potatoes and corn-zucchini mix. 2 Lunch box Leftovers packed.

- 6 apples (small)
- 2 large beets (raw - peeled)
- 3 oranges
- 3 bananas
- 2 large carrots (raw - peeled)
- 3 tbsp chia seeds soaked in a cup of water

Only an hour and a half until lunch!

Yep.  They're like shitty red carrots, but they contain a lot of Beta-Alanine (especially if eaten raw) and nitrates which increase your aerobic capacity rather spectacularly.  Plus, red pee is fun.

I'm not fazed by the raw beets. I add them to my salads and smoothies. I also agree with the red pee comment.

Rather, I am fazed by the amount of food you consider "a snack".

The very last of the lemon mead my brother and I made in 2005.  I wonder if the recipe is around somewhere?  I doubt we could repeat this mead though, it was fantastic!

I make my own sorbets from frozen fruit or fruit juice frozen in cubes. Just add to Vitamix with a little bit of water and voila! you have sorbet with no additives.

Today's sorbet was made with frozen guanabana juice, a Caribbean specialty fruit. I've heard this fruit has high anti cancer properties.

It was so delicious and creamy!

I also like to make sorbet with frozen mango, frozen coconut meat, or frozen raspberries.

Whoa! I’m amazed you can age homemade mead that long! Was it starting to turn at all or just becoming more fantastic?

It was about the same level of fantastic that it was when it was about a year old.

I didn't really *age* it, I had 1/4 bottle in the fridge in the basement I forgot about.  I do however make mead regularly, and it ages very well up to 5 years.  After that I couldn't tell you cause it's gone.

That's how I get my kids to eat them.  Red pee, pink poop.  Even better if I feed them blueberries at the same time.

mixed baby greens, radishes, carrots, leftover broccoli, leftover roast butternut squash (that thing was HUGE and I'm totally over it), gouda, homemade garlic vinaigrette, sun dried tomatoes.
