Meatloaf made with lean ground pork. This is the first time in years that I have liked meatloaf.

I made it because I was too lazy to make the tourtiere I bought the pork for, and I had all the ingredients. That included opening a box of Panko crumbs that I've had for a year or two.

Love a garlic Panko crust on mac and cheese.

Open bagel topped off with pesto, danish feta, red onion and smoked salmon.

Made it to bring on a 5 hour flight a couple of nights ago (no food on airline) however ended up sitting in my carry-on as I was full. Bit squished but still good!!

I love colchannon, too, Inaya, but generally too lazy to fix it.

Chippewa -- Thanks. Easy to make if you have a food processor.

Ingredients:

1 cup rolled oats
1 can black beans
2-3 pickled jalapeños
1 inch ginger root grated (or 1/4 teaspoon ginger powder)
1 inch fresh turmeric root grated (or 1/4 tsp turmeric powder)
pinch black pepper (helps in turmeric curcumin  absorption)
1 tbsp ground flax seed
pinch salt (optional/to taste)

Directions:

1. Add ground flax seed to 2 tbsp water and let sit for 10 min.
2. Add oats to food processor and grind coarsely (use pulse for a 15-30 seconds)
3. Add beans, jalapeños, ginger, turmeric, black pepper, flax mixture, salt and again grind coarsely
4. Makes 4 medium sized patties
5. Heat on skillet or grill depending on your preference with oil or without.

This sounds good. Red lentil dahl soup is a frequent staple in our house. I can eat  all week long till my other half gets tired of it ;) Very filling and must try your recommended sides of squash and the fat tire. Unfortunately, that fat tire will probably add to my already existing spare :(

A Vietnamese- inspired fried rice  that used up various bits of frozen vegetables  and half a pound of cubed tofu that has been lost in the depths of the freezer for an unknown length of time. Delish.

Steamed rice, oven baked broccoli and roasted pine nuts and roast chicken with stuffing. Made out of leftovers in the fridge. Yum!

Turmeric Milk Tea

Turmeric Milk Tea

1 cup soymilk (or regular milk or other non dairy milk of choice)
1/2 tsp turmeric powder
pinch cinnamon
pinch cardamom powder (or coarsely crush 2-3 pods of cardamom)
pinch black pepper (helps to bring out the nutrients in turmeric)

Add everything to small saucepan and bring to boil. Reduce heat to low and simmer for 20 mins. Strain into cup. Add sweetener of choice. Enjoy!

Made pork mole using every cheap-ass inauthentic lazy shortcut in the book (peanut butter instead of ground seeds/bread, cocoa powder instead of grated chocolate, five spice powder to replace all the spices, water and Maggi to replace stock). Turned out so good I'm gonna add it to my regular repertoire! If I can remember what I did...

Green chicken curry, as prepared by myself in the slow cooker, fished out of the freezer, and reheated on my returning hungry from the cinema in the city with my teen daughter.

Twas pretty flavourless, so i added a couple of spoonfuls of lemongrass from the jar, some fish sauce, and a few squirts of bottled lime juice. MUCH improved. Served with wide flat rice noodles and apple juice and a salad.

Fresh nectarine for dessert.

This King Arthur flour recipe for applesauce quick bread mentioned on her blog by Mrs. Frugalwoods:

I also made the applesauce to make it with, from some apples that had been in the fruit bowl a bit too long.

With a cup of drip coffee. We were usually using K cup pods, but I had some coffee beans in the cupboard, so I ground them and have been using the hot water from the Keuring to make drip coffee in the Bodum jug I already owned. Writing this, I just remembered another frugal action, I made the coffee yesterday and reheated today's cup :)

This is part of my uber frugal January cutbacks.
